Honestly, that's the worst looking "laing" I see. Probably, your "dahon ng gabi" is best for "pinangat" as it looks mushy and soft. I suggest you have to choose the right "dahon ng gabi". If you go to Bicol, the best dahon ng gabi for this dish is the one coming from Nabua. But, the best tasting laing I ever had is from Iriga City.
I grew up and spent the 1st half of my life in Iriga City. This is the 1st time I saw Laing cooked with water. You're right, this looked so mushy. And laing leaves shouldn't be mixed right after you put them on the pan para di sya makati.
Maybe because he used the modern gata in delata, not the traditional piniga na gata which is tinutubigan na para pigain. So since the gata in the delata is more concentrated, that's why, maybe, he adjusted it by adding water. Isa pa, he explained in another video na PAMAHIIN ang hindi paghalo para daw hindi makati. What he emphasized is cooking your laing well (lutuing mabuti) to break down the "makati" component of the gabi. You cannot please everyone as they say. Hindi na po bago ang evolution sa buhay ng tao.
