New Orleans born and raised. Never seen the file added to the roux but it makes so much sense. I think it’s traditionally added to the individual bowl bc some ppl don’t like file so that way you can add it if you like it. But this looks fantastic! Think I’ll try it this way next time bc I like file. Perfect thickness and color.

One thing I don't like is the okra. My mother said that when you make soup or any dish that calls for okra, that is what gives the soup or dish a good flavor. I make mine the same with a few exceptions, even adding the file to the roux. Great flavor! The only thing I do differently is no tomatoes and I add 2 cups of all the vegetables and an extra pound of shrimp. I've taken to using catfish when i can't afford the crabmeat. It makes a great substitute! After soaking up all the flavor from the broth you'd never know it wasn't crab. Have you ever made catfish courtbouillon? I'm betting you will love that, too! Enough said yours looks fantastic, chef!!❤

Nice job. I'd call it old school with a twist (file to the roux!). I've cooked file with the rice before which is also very good. Never tried adding it to the roux.
I never remember how much roux to make relative to stock. With your way I don't have to know now...I'll just make a bunch of roux and add what I need. Thanks, Chef!

Sautee the okra until it's practically dry to get rid of the slime, then add it to your gumbo. 😊
