I did not know anything about cornstarch until I heard you describing the fiasco w the cranberries🤣 I’m glad to know about making a slurry. Also letting the eggs and milk be at room temp before using them. I never knew that. 👍

Man, I’m between Crosby and Huffman. We gotta be close. Wanted to let you know that I’ll have my 13 year old grandson with me this weekend. He’s been after me to teach him how to cook. I’ve been gathering ingredients and figured we’d do meat jambalaya with chicken, pork and sausage. After we take a break, we’ll start on shrimp/crawfish etouffee. Now I’m inspired to add in your shrimp/crab creole on Sunday morning. We’ll have the family for Sunday dinner. Come’on! There’ll be plenty! Oh, and by the way, not seeing any okra😮

Oh I forgot in addition to lump crab meat you can also add whole blue crabs if you like whole crabs in gumbo! Now you have all the ingredients for a great Louisiana Gumbo!!

You could make an excellent gumbo! You're 90% of the way there already with this recipe. All you need to add is more broth, roux (roo), and gumbo file (feelay) powder. Making a roux is often the deal breaker for most first timers, but very good prepared and jarred rouxs are widely available online and I would think widely available in stores where you live. File powder is available online too. The first gumbo I ever tasted was on a cold and rainy halloween night. My neighbor at the time, a Louisiana native, yelled for us to bring our 3 children next door before going in for the night. He and his wife showered the kids with candy and surprises and he brought me a mug filled with the last bit of hot broth from a gumbo, made with jarred roux, they'd been enjoying. I'd never tasted anything like it and was determined I'd learn to make it, and I did and my grown family devours it every time I make a huge pot. I'm often asked to make it for church functions and fund raisers. I always take a quart to my former co-worker, I'm retired, who dives into it immediately. I also often take a quart to my brother at work at his barbershop and to my Dad. As I mentioned, I make a huge pot. I hope you'll give it a try. I think you'll be glad you did and you'll do a GREAT job with your own take on it. Thanks for the videos I enjoy and am inspired by so much!

Where do you find the shrimp base? I usually use cream of shrimp by campbell's. We usually fry the sausage before putting in the stew.
