That was striking to say the least.
Huge amount of respect for both of these guys. Especially for Bourdain when he talked about respecting where your food came from and not wasting the ingredient.
RIP Tony. You were here just a couple weeks before you decided enough time had passed. It's an honor to have my location as one of the last few you done.
Talk to people when your mind is having trouble people. None of us should have to leave earth like this.

I appreciate Anthony's remarks regarding Vegans at 10:35 and his perspective on gaining knowledge and understanding about the meat we consume at 20:06. It's not merely a piece of steak or a hamburger; it goes beyond that. If one had to raise their own cattle and personally participate in the process of slaughter, there would likely be greater respect and appreciation for the animals we consume. People should strive to be more self-aware about the meat we consume today. It's disheartening how a multitude of animals are being mass-slaughtered due to our unrestrained meat consumption, often in inhumane and tormenting environments
Your posting should have a lot more likes. Perhaps many Americans listens to what Anthony has to say about facing the animal that you're going to eat or at least being aware of cruel farming conditons and they say "Yeah, Yeah", and it goes in one ear and out the other. I'm not a vegan but a first class carivore.
I spent 20 years in kitchens, read all of Bourdains books and love the interview you had with him. Although I am not in the service industry any longer I try to this day to help people understand the science behind the scenes of food and love this Startalk. Neil you the Man

Bourdain mentioned the bitter component in the Philippines. Very true. We have dishes like 'papaitan' where bile is literally the main ingredient in the dish, and we love the vegetable ampalaya (bitter gourd) which is excellent in combating symptoms of diabetes.
Had to come back to this video because it mixed two of my favorite celebrities. Can't believe he's gone. I'm utter shocked and beyond sadness. First, Bocuse and now him. Please,world..let the icon momentum going for a while,don't take them oh so soon.

I love the wisdom and soul the Anthony speaks with. I love Neil too of course, but specifically I love what Anthony talks about here. He speaks from such a place of truth and transcendence. I wish more people would uncover and develop that side of themselves. The world would be a better place..
Loved the interview portions, but found the cuts back to the studio roundtable to be mostly useless.

those are two totally different folks.
2 of my top 10 writers/thinkers/celebrities.
From the age of 7, I was raised in the countryside and the first time I saw a pig slaughtered, I felt like shit for eating meat. Worse than that, I saw the pig as a friend (laugh all you want, it's all right) so it was traumatizing moment for a city born 7 year old boy.
Back then, vegetarianism or veganism were mostly unknown, so although I still eat meat, I hate people who love the eat a steak but won't eat tripe or blood pudding because it's deem disgusting. And I eat small amounts of meat, a couple of times a week and preferably from sustainable sources.
Bourdain was one of a dying breed. Free thinker, honest, f*** the establishment, amazing and a true champion of food discovery.
Whoever controls the spice, controls the universe.

I have a newly found appreciation for Anthony (I've seen his regular show.. not a fan of watching people eat...); I really didn't think of him as a knowledge bank of culinary tricks, but surely (due to his show) he knows better than most about food and it's meshing with culture (something I don't often think of going together).
2 of the most interesting men in the modern culture.
I recognize the professor of nutrition. She came out in a few moments in Spurlock's classic film, Super Size Me!!
The intertwining moments with Bourdain are pretty interesting as well. I watched his entire No Reservations series and now a fan of Parts Unknown.
I love this show so much, simply because I learn something new every time.
This is what public access TV used to be like, you never knew who in the hell would be interviewed, could be the mayor, could be a bus driver.

I totally enjoyed the conversation at the end. It touches base on how Diverse the tool "Goldie Locks Zone" is in reality. How water boils differently at different altitudes, our liquid water sits in a zone starting under it, and stretching high into the sky(depending on the number of total molecules balancing across the center of mass). It would be in a completely different state without this region being "Goldie Locks". There are so many things in reality that require a balanced environment like that. The Electrons line up in a boundary held together by Electromagnetic regions.

I was once sipping an ice-cold beer in a Bangkok bar, the sanctuary of choice for anyone studying the local fauna and flora. I caught sight of a frisky Frenchman teasing a local Thai lady with a tranch of Epoisses cheese dangled in front of her face. The doughty lady fled in terror, the cheese's malodorous character causing her to bolt in a whoosh...

Super interesting conversation. How I wish I could do this. I will do this. And you'll know different things, different mindset.
I didn't realize you could tell when a steak is ready just by hearing it on the pan. I've seen them test it with their finger on Hell's Kitchen. I've also seen Marco Pierre White say that you can tell by looking at the juices just appearing on the surface of the steak.
And if you've played baseball your whole life, you can tell how far a ball was hit by listening with eyes closed.

I am always amused at people who believe that animals (humans) eating other animals is wrong and awful, despite the fact that animals have been eating animals for as long as there have been animals.

I see similarities between Lou Reed and Anthony Bourdain: background, sensibilities, innovation, finding your niche, dislikes, punk-edginess… etc. (Even looks!) They have a lot in common as I’ve read (semi-studied) their lives, output, influence.
I admire them both!
If you worked as a chef in restaurant, a very fast-paced restaurant like what Bourdain did. You will get scolded if they found you using thermometer to check whether the steak is medium-rare or not. Their advice is basically like every homecook moms, "put your finger on that steak, check the meat." That's all. It's a play of your senses and not depending on technology.
Damn, Eugene, every, every time he opens his mouth I laughed out so loud. Such a cool funny guy. Great for the show, great to have him.
And Anthony and Dr. Nestle ... Great guests so interesting to hear from and listen to, just as my favorite, Neil, always seems to be.
