- One of my favorite things to keep in the fridge every week is a Rotisserie Chicken. They're so cost effective and versatile - you can literally make 100 different recipes from it OR just eat it as is lol. Today I am showing you 3 of my favorite ways to utilize the most underrated grocery list item. Let's #makeithappen

Chicken Salad-
Chopped Chicken (1 whole chicken, bone skin and cartilage removed)
1 cup mayo
2 tbsps sweet relish
2 tsps dijon mustard
1/2 cup finely diced celery and 1/2 cup finely diced red onion
2 tbsps diced parsley
Old Bay, Chicken Bouillon Powder, All-Purpose Seasoning
Lemon Zest
Buffalo Chicken Dip-
1 rotisserie chicken
1/2 dice onion
2 packages of cream cheese (softened)
1 cup ranch dressing
1/2 cup blue cheese dressing
1 package of ranch seasoning mix
1 cup cheddar cheese
1 cup pepper jack cheese
1 cup Franks Red Hot sauce (or your favorite buffalo sauce)
ap seasoning and chicken bouillon
Chicken Enchiladas-
1 rotisserie chicken
1/2 cup black beans
1/2 cup kidney beans
3/4 cup corn
1 red onion
1 red and green bell pepper
16oz Colby jack cheese
2.5 cups enchilada sauce
1 can green chiles
1 tbsp garlic
2 tsps cumin, smoked paprika, chili powder, chicken bouillon
1 packet Sazon
AP seasoning
12 low carb street taco tortillas
Cilantro
(Bake in the oven at 400 for 25-30 minutes) - บันเทิง
I use Rotisserie chicken to make chicken and dumplings.
Saute some carrots, onions and celery, add a couple quarts of chicken stock and use the juice from the tray. Toss the leg and thigh in and simmer. While that's working make a homemade biscuit dough and roll into balls, then cut up or shred the chicken breast. Then remove the thigh from the stock, add chicken breast and dough balls and cover. Simmer 15 mins. It's amazing

LOL @the "you should probably grow up" if you don't like blue cheese ✋. That would be me....I'm "growed (using this spelling intentionally) up" already though. Enchiladas this week. I love that you added the 2 beans because I can't eat corn but I'm always looking for veggies to add with my Mexican or Tex-Mex dishes.

All looks great! Ever tried Sour cream green chili chicken enchiladas? Don’t forget you can make easy chicken tacos too! This was my grandmothers hack she taught me. That woman always had a rotisserie chicken in the fridge to whip up something quick 😉

❤❤❤ I just bought two from Wal-Mart online 4 delivery..I debone & separated the white from the dark meat to use in different recipes and this video is perfect! I cooked some knorr chicken flavored rice 🍚 last night 4dinner & it was really good. I did use some of the dark and white meat for the rice. Anyways!! Sunday night tomar- I do plan on make a Creamy Chicken Pasta Bake using ur one of your famous recipe ofc! ❤❤❤

That filling for the enchilada dish would be fabulous on nachos too! Thank you for scraping the pan 🤣🤣🤣 I feel so much goodness is left behind! It all looks amazing! The bloopers at the end are great! lol I'm loving your skillet and AP seasoning I purchased not too long ago. Going to a couple weddings this year, so I will be re-purchasing them for the gifts. Chef, you use a lot of Dijon Mustard. Try using Herlocher's Dipping Mustard instead. Adds a whole new level of flavor.

The recipe for the enchiladas is the same as the buffalo dip in the description. Everything looks scrumptious though!
