Tip: if you put a little shredded cheese on the bottom of the taco shells, put them in the oven just until that melts, take them out of the oven and then fill with your meat mixture, then the shells don’t get soggy
I get the rotisserie chicken from Sam's. It tender, juicy, and once meat is off bones, I put carcass abd skin in my electric pressure cooker and make broth. It's delicious 😋
I must also be old! I was singing along with you each time! All of these look delicious! Both my daughters ask to watch "Mandy from Mandy in the Makin'" (in a cute midwestern version of your southern accent!) every weekend as we are making up our meal plan for the week. And my youngest son asks if it is a Mandy meal when it is something new. To say you have made a wonderful impact on my family's mealtime is not an understatement! Thank you for all you and your family does for us! Smiles, Abby Smith
I don't buy rotisserie chicken, but I keep chicken that I have already poached in my fridge that I use the same way. I poach mine in my EPC, a family pack at the time, so it's very easy to do ahead and keep on hand. And, since I go that far, I keep the broth poaching makes and use it and the chicken butter in my recipes, too, and that's basically free since they are a by product of cooking the chicken. I do thighs since I think they taste better. You can do bone in or bone out, but if you do bone in, after you pick the bones, I recommend putting the bones in the leftover broth and pressure cooking them a second time to extract the maximum gelatin from them. That "broth" makes GREAT pan sauces! TFS.
Sounds like a great thing to do! I have a small family (me, haha) and this would be great to shred and freeze, cube and freeze, or even leave whole for a hearty dinner. What is an EPC? pressure cooker? I am scared of them but don't mind stovetop cooking. Thanks for the tip!
Love the recipes as usual 👍 I always put my cheese on the bottom of the shells, the hot meat melts it and I keeps the shells from getting soggy….and of course more cheese on top…because Cheese🤩
Aww.. Gracie Lou is so spoiled eating chicken and cheese.❤ But really there's no other way to treat our fur babies. My Dachshund and Yorkie love raw carrots.
Our Chi/weenie loves most foods, but his latest obsession is apples!😂 We have a fruit bin in our RV. He will go stand by it and sniff, and look at us and beg!😂
Marzeezee we had a cocker that LOVED apples. Hubs used to give her some ofcc bc every apple he ate. One day he didn’t want an apple, but SHE did. So he gave her a whole one. She had what we called “a ball problem”. If it was round it was a ball. (Beware peanut m&ms on white carpet!) She rolled that apple all over the house (didn’t know HOW to eat it) until I took pitty and cut it into quarters for her. Bananas and strawberries and watermelon she loved too.Yes she was spoiled rotten.
Learned a trick for rotisserie chicken. Have not tried it yet. Put the chicken in a large zip lock bag and shake it up. It is supposed to take all the chicken off. Love your videos!!! You always make me smile and laugh. Thank you. 😊
Asking y'all to please continue to pray for me. Ever since I had sinus infections this last time. I've been suffering from severe migraines and blurry vision at times. We don't know what's causing them. Thank you in advance. God Bless.
Sometimes, migraine headaches are caused by to much salt. Causing dehydration in your brain. For this my family takes a potassium pill and drink a non caffeined drink.
The cranberries are in the top favs list for my almost 18 year old. We love them so you just sing it louder til he likes it too. ....also the lemon pasta and chicken tacos were making me so hungry! So i went in to the kitchen to fix it. I didnt have anything listed for either so i had an apple. 😢 it was a cosmic crisp. It was a good apple. But not taco good.
Mandy, I love that Gracie is under your feet the whole time you’re cooking, my little dachshund Taz we have to chase each other around the kitchen for me to get where I need to go. He is literally under my feet the whole time I’m cooking.
Mandy. I love watching you cook and enjoy your sweet and loving family dynamic. It is so comforting to join in virtually with your Christian household. I have been attracted to your beautiful Caraway cookware since you began using it and not only do I trust your recommendation but I can see with my own eyes how well it has held up. I told my husband I want the Caraway cookware and minis set in navy for Christmas 2024. I can’t wait!!!
My husband is team saucy pasta, but I prefer mine a little drier. My usual use for rotisserie chicken is for a quick lunch. I can grab some chicken, mozzarella pearls, baby bell peppers or broccoli, a small naan,a handful of berries, and some ranch dressing and make my own adult "lunchable" for school. Doesn't make me feel overstuffed, so I'm able to spend the rest of the day teaching without getting sleepy! I'm loving your videos. There are so many recipes I want to try!!
I always keep small amounts of frozen rotesserie so that when I’m in a hurry to make something I grab that add Pioneers chicken gray packet and make mashed potatoes, dinner ready in 30 min or less
I had to do it. I created a Cooking With Mandy playlist so I can find them easier. I don't have to go through all my other saved cooking videos now. One of the recipes I make often is the mini bacon barbecue meatloaf.
Hi Mandy. You are right on time! I literally woke up this morning looking on Pinterest for an easy Chicken Parmesan casserole. I’m making that recipe for dinner right now.😃 I loved your musical interludes.😂🤣 Thanks for sharing my friend! 🤗💕
It's funny when ever we watch your videos and you mention cheese no matter were my friends are in the house kitchen, living, even bathroom, bedroom etc ever one of them yell Gracie 🤣🇨🇦
I buy the ppfarm dry bread crumbs/dressing mix and mix with melted butter as a crust (save some for top). Top with shredded chicken and american cheese. Then mix cream celery soup and a can of cream of chicken with a cup of chicken broth. Pour over everything and top with rest of dressing mix. Bake 350 for about 30 minutes.
Great job Mandy! Although, I would never use Prego. I come from an Italian family from Brooklyn NY. We make, "Sunday Sauce" or "Gravy" made from tomatoes, onions, garlic, herbs, spices and meats that are simmered for hours. If any is left, after a Sunday meal, the leftover sauce is used for any additional pasta meals during the week usually on Wednesday. Sometimes we "can" or freeze the sauce for future use. In a pinch I have found a quick and easy replacement. I use one 28 oz can of San Marzano Peeled Tomatoes with one 14.5 oz can Italian Style Sewed Tomatoes with basil, garlic and oregano. I add dried onion flakes. Use a stick blender to break everything down. Bring to boil. Add a splash of water, or white or red wine depending on what you are using the sauce for. White for poultry, red for beef. S&P to taste. There are many versions of these sauces, but I hope you try to make them your own. Keep on cooking, I'll keep watching! Love, Light and Respect!
Hi Mandy and family, just an fyi when you make your casseroles with don't boil just put the pasta and everything else in your deep casserole dish, stir it well, cover with foil for 20 mins, put back on for the remainder of the time....simple, simple
We did the creamy lemon pasta tonight. Both my hubby & Granddaughter said it was definitely a go-backer!! The house smelled amazing while it was cooking. I may or may not have used a bit more garlic than the recipe called for but wow!! Another home run!!
I use shredded rotisserie chicken in the recipe for lemon chicken gnocchi you made. I still brown the chicken in some butter and oil and proceed from there. I also add more sauce ingredients cause I like lots of sauce! So good!
You & your hubby are so cute. I love watching yall because yall are always so cheerful and fun. Thank you. Plus, you have saved me numerous nights with delicious recipes. I have two nonverbal Autism sons 6 and 8 years old and two small daughters solo parenting so it's very much appreciated. ❤❤
I just saw a post somewhere here on TH-cam that you can debone the whole chicken in minutes. Put the still warm whole chicken in a one gallon zip lock bag, seal it and mush it all together. It only takes about 90 seconds. Just make sure you get ALL of the bones out. I ended up with only two small bones in my chicken. I froze half of the chicken for later use. So simple and quick. I love your channel and website...A-1!! Keep it up. I love trying your recipes.
Yum! All three recipes look amazing and delicious and definitely being slid into this month's meal plan! Gracie Lou, this was a great chicken and cheese feast for you! Yay!!!! Great commentary from Dad and Son! Thank you so much, Mandy! Have a wonderful weekend, y'all❤😊!
I always get a rotisserie chicken from Sam's Club and they are always under $5. Mostly make chicken and dumplings with it. Always take off the skin and meat is still flavored. Yum. Thanks for all the great recipes Mandy. Y'all are such fun to watch and everything is so real as well as hilarious. 😂
I'm so glad your still happy with your Caraway! I saw that Hexclad in a previous video and I thought oh no, something must have happened to her pans or she likes this new one better.
Cheese, chicken and pasta! All my favorites!! I just bought more pasta this week. Can't wait to make all 3 of these. You all just make my week.❤ Love when Gracie Lou is just talking away! 😂
I am from Nova Scotia, Canada and the average price of a rotisserie chicken is $10-$12 . Costco is cheaper by far, but there are only 2 in our province and it is a 1.5 hour drive from our home.
Mandy & Steven, this one was extra fun - I loved the little songs that u inserted, & love that he calls u "sweet pea!" Miss Gracie is theeee most gorgeous kitty! Thanks again for solid, easy to accomplish recipes! ❤
Dear Mandy ~ thank you ~ I made the Creamy Lemon Pasta tonight and it came out great, delicious. Your videos are such a joy to watch. As an AF family we thank Steven for his service. To all our troops, all branches - Thank you all for your service to our great nation. 🇺🇸
Hey sweet friend, they all looked delicious!! Thank you for sharing your wonderful recipes with us. Gracie is so adorable. Thank you for your prayers. I start chemotherapy next week. Sending blessings to you and your beautiful family.
Awe Kristin, u will be in my heart & prayers next week. I had a boss who found a great deal of pain & nausea relief by going to an Accupuncturist. They can be hard to find. But massage can help a little too. Sending u love & prayers sweet friend from beautiful West Michigan! ❤
That lemon chicken sauce looks right up my alley. I went to a restaurant and had some and it was so divine. I'll be recreating it this weekend since I have everything on hand.
Swimming in sauce is typically the American way. Itilians usually just coat the pasta to let the pasta shine. But everyone is different and is no wrong way. Happy eating.
One of my favorite things to make with rotisserie chicken is a Chicken Cordon Bleu Casserole that comes from Tasty Kitchen. I didn’t know what the weird savory truly meant until I made this for the first time several years ago 😁 It’s one of our favorites!
I loved all three of your chicken dishes!! I loved it when Stephen started singing!! I knew exactly what song he was singing!! Lol 😁 I love anything with Parmesan Cheese in it, or on it!! YUM!! When a song wants to come out, “Uh-Uhuh I Like It” or “Out Of My Head” or if a song gets ‘stuck in your head’ just sing it!! Poor little Gracie, she want just a little more cheese!! She’s adorable!! Thank you so much for all your recipes!! I love lots of Spaghetti Sauce over my noodles too!! Thanks again Mandy!! NORMA COLLINS FROM TEXAS
You are in my favorite place with todays recipes. I know I will love them all. Want you to know how much I enjoy and appreciate your channel. You and your guys (and Gracie) are so pleasant to watch. Your presentation is easy to follow and always brings me a smile. Thanks and hugs
Absolutely love Stephen’s rendition of KC and The Sunshine’s Band song. We saw them last year at Hampton Beach Casino Ballroom in New Hampshire and it was one of the best concerts I’ve ever seen. It was a lot of fun!
I love the Caraway cookware I have had it on my lists for a while but right now out of my price range being on disability is hard you have to pick and choose which new items you are going to get plus I am long Covid so can’t cook a lot right now. I found you when I was in health and rehab.
All of these recipes look wonderful especially the tacos.I'm with you with having pasta saucer,it matter doesn't if it's like your dish here or if it happens to be mac and cheese, I like extra sauce.I don't like home made mac and cheese without a rich creamy sauce and lots of it. Your recipes are great Mandy. I love seeing Gracie Lou especially her talking, getting her treats,it puts a smile on my face, seeing her. Thank you Mandy, you and the family,y'all have a wonderful night and weekend.Y'all take care.
Fixed these tacos today and they were good! The bottom did get soggy so I will try the tip that I saw in the comments but they were absolutely delicious...easy and quick weeknight meal. Thanks Mandy keep'em coming!❤
I bought a rotisserie chicken yesterday and took the meat off of the bones and made some delicious stock. So today I’ve been thinking about what to make with the meat. And here you are. It’ll be the lemon chicken for us tonight! Thanks! ❤️
Mandy, I live out in the country in Nevada about an hour from LasVegas. I agree about the price of rotisserie chickens at Sam’s but I don’t go often. I usually buy one or two when I do go and I vacuum pack them and put them in my freezer. Then I have them when I need them. For ones like me this may work for them also.
Oh WOW Mandy! All of these recipes look delicious. I will definitely be trying all of these. As always, thanks for your hard work giving us great ideas to try.
I'm so glad you talked about your pans. I've heard you mention them before, but I've got to get some. I have such a hard time finding good ones. Definitely gonna check out Caraway😊
Glad to see this. I just bought two rotisserie chickens from CostCo yesterday. Also, love you call Gracie ma'am. I have a Chihuahua Ginger (or Ms. Snaps when i open the back door of the Lincoln for car rides) and my cat Pickles and they are both referred to as ma'am. I am defiantly trying one or two of these recipes. 👍
I live In Ontario, Canada, and in my city, a rotisserie chicken is around $13.00. Still not a bad price considering chicken is so expensive. Chicken Tacos sound yummy
We always grab at least 2 rotisserie chickens from Costco each time we go there to shop. We challenge ourselves to create new ways to use the meat before making chicken stock .. and then ... 😊
Oh Girly, I tried the creamy lemon pasta and that was awesome. I did add more lemon and some lemon pepper Mrs.Dash.. it took it to a whole another yummy level. It is a keeper in my household. Iight and love to you & your family.❤️🌹🕊
I'm autistic and I make mistakes with recipes all the time. Sometimes I mix up TSP and TBSP, sometimes I forget an ingredient, sometimes when I'm putting several cups (or teaspoons, tablespoons, etc.) into a recipe, midway I will forget how many I just put in. I'm a mess. 🤦🏻♀🤦🏻♀ So don't feel bad. Honestly, though, I don't know if it's the autism or if I'm just a scatterbrain with or without it. Also, I am usually team less sauce but looking at the final product in your bowls, that looks like the right amount of sauce for that particular dish. I love seeing Gracie. I keep her in my prayers to give her a long life.
I love rotisserie chicken from Costco or Sam's. I really enjoy using it on salads for lunches and in recipes for dinner. Your recipes look amazing! 😋❤️
Love how kind, gentle and loving towards each other
Tip: if you put a little shredded cheese on the bottom of the taco shells, put them in the oven just until that melts, take them out of the oven and then fill with your meat mixture, then the shells don’t get soggy
Thanks
Good idea ❤
I do this too!
I wondered!! I have done thar with burritos but not tacos. Thanks for the tip!
Brilliant 😊
I'm here...who else is ready for Mandy's good cooking ❤
Always
Any time of the day! I always enjoy the videos and the food!

Gracie hit the jackpot. Cheese and chicken what a deal. Oh, the recipes look great too. 😅
Y'all need to add more happy dances...I like it😂
For the last recipe, try adding some grated Parmesan to the melted butter and breadcrumbs! I add that to my breading when making chicken Parmesan.

I don't do that as the small bones like the neck bones and other bones get lost. Plus we don't use skin.

A good essential oil like peppermint works good too.

I just love Gracie. She’s so precious. Makes me miss my sweet Simba every time I see her.
I hear you. It cheers me to see her too. I lost my Munchie last year. ❤

My favorite way to use rotisserie chicken is on salads and making smothered chicken burritos, enchiladas, or chimichangas, and chicken salad.
I loved seeing you in Jessica's video the other day❤ Ya'll are my fav's😊
These are all winners, Mandy! Gonna try them all. Rotisserie chickens are the best! Thank you for the new recipes! 🐔

I love the Caraway cookware I have had it on my lists for a while but right now out of my price range being on disability is hard you have to pick and choose which new items you are going to get plus I am long Covid so can’t cook a lot right now. I found you when I was in health and rehab.
I got me and my daughter a set for Christmas and we love the Caraway so much.
I'm so glad y'all love it!
Looking forward to making two of the recipes between this week and next week. They all looked delicious!
Lots of great ways to use up a whole chicken like that. And thanks for the disco throw-back memory of KC and the band.
Italian seasoning would be great in the bread crumbs and butter for the top of your casserole.
We just received our first piece of Caraway. We ordered the saucepan and will order a set later!
Mandy ,I love your videos! Please cook taco shells before filling ( put them over oven rack upside down so they stay open)
I put cheese in the bottom of the taco shell so when it inevitably cracks - stuff doesn't fall out through the bottom of the shell. It's like glue.
Thanks! ❤️
Wonderful!
I Always choose the Extra sauce 😊
These all looked delicious, not sure which one to make first, probably the tacos!🌮🌮🌮
The Barefoot Congress makes Lemon Cappelini (sp?) I.e angel hair pasta. It is just butter, lemons and angel hair pasta. It is super fast and yummy.
Hi Mandy, all of the recipes looked good, I think I would like the first one the best. Thanks for sharing
I like to add refried beans to the baked tacos. So yummy
YES...to lots of pasta sauce!! 😋 Hubby likes less sauce but I love my pasta swimming in sauce. Yummy recipes to try, thanks so much Mandy!! 💜
I live In Ontario, Canada, and in my city, a rotisserie chicken is around $13.00. Still not a bad price considering chicken is so expensive. Chicken Tacos sound yummy
I never use that kind of taco shell. I fry tortillas they dont fall apart when you bite into them. The filling looks delicious.
I usually make chicken salad, potpie, or chicken and dumplings with the chicken. Yummy looking meals. 💚
Walmart in NOLA has decent size Rotisserie chickens. I've got a Huge one for $5
We always grab at least 2 rotisserie chickens from Costco each time we go there to shop. We challenge ourselves to create new ways to use the meat before making chicken stock .. and then ... 😊
Wow, the chicken parm casserole looks amaaazing!
Oh Girly, I tried the creamy lemon pasta and that was awesome. I did add more lemon and some lemon pepper Mrs.Dash.. it took it to a whole another yummy level. It is a keeper in my household. Iight and love to you & your family.❤️🌹🕊
Sounds great! So glad you loved it!
These recipes sound so amazing.
Thanks Mandy
I love rotisserie chicken from Costco or Sam's. I really enjoy using it on salads for lunches and in recipes for dinner. Your recipes look amazing! 😋❤️
