- There's nothing better than starting a new day with a delicious hearty breakfast, and I've got to say that breakfast is our favorite meal of the day. These Skillet Potatoes with Onions and Bacon can't be beat. My mom prepared these potatoes often when I was growing up, and it's a recipe that has become a breakfast favorite in our house. If you're looking for the easiest Step by Step recipe than this one is for you. I hope you give it a try.❤️
INGREDIENTS---------------------------------
1 xtra Large Russet Potato (or 2 medium)
1/2 Small Onion (julienned)
3 Thick cut Bacon Strips (big cubes)
1/4 Small Yellow Bell Pepper (strips)
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Paprika
1/8 tsp Cayenne pepper as needed (optional)
Salt as needed
Pepper as needed
● (you can add a little butter or oil if needed)

This is a very technical dish. I was doing it ALL wrong. I put the onions in first, I used a lid, and I over stirred. I finally gave up trying to make fried potatoes. This time I did it the Rachael way, it was delicious! Follow the steps....it works.
I love to watch Ms. Rachel cook 😍 We are from Louisiana and my granddaddy used to make this for supper.. He cooked smoked sausage and onions, flour bread w/ cane river syrup.. He fried it all in his cast iron skillet and that crisp on those potatoes 🤯 *nostalgia moment* Thank you Ms. Rachel ❤

I like how you season in steps and sprinkle all over your food. So many cooking TH-camrs dump all the seasonings in one spot and I could never figure out how that all gets incorporated evenly. The way you do it makes more sense.

Rachel, Rachel you made my weakness. In the 1950' when I was a little girl my father who was from Quebec, Canada use to make like you , don't remember the cayenne but it was so good. That will be my early dinner tomorrow. ❤

One of my favorites! Been eating (and cooking) fried potatoes and onions all my life (I'm old!). Mama did this when we were just little. And, I'm glad you can make biscuits! Been eating and baking biscuits since I was a kid, too. Great meal! Looks delicious!
I go through phases when it’s easier to sleep if there’s a little talking going on AND I love Rachel and her cooking videos, so this is the best thing to set it on… binge watching/listening/dreaming Rachels recipes! I’m one week out from total knee replacement surgery, so watching and then nodding off, waking up in the middle of another recipe; living vicariously and taking notes for more delicious dishes that I want to cook when I am up and about again. Rachel, my mom made the best fried potatoes and onions. She never used a vegetable peeler and she cut them up just like you do, cutting them directly over the skillet. The smell was heavenly! Thank you!
My mom, too. She was one of 12 siblings, and I think potatoes and onions were probably on her family's table more often than most things in the 1930s and '40s when she was a kid. So we had them a lot in the '60s and '70s, too. That's the smell of HOME to me.

I’ll never understand why it’s so important to some viewers for the creator to “take a bite.” They showed us how to make it and they’re trying to talk and I don’t care if they eat it or not. It’s almost impossible NOT to smack under the circumstances. I dislike that, as well, so I fast-forward to the end. Mrs. Rachel is able to do it all exceptionally well. Great channel!

I love fried potatoes. When I was a kid my Mom would fry potatoes and serve it with breakfast sausage (a whole thing of Weber’s sausage sliced in rounds ) and applesauce. She would fix that for dinner. It was so good

Growing up, we had these a lot and I always loved them. I think my mom used Crisco, though? She made them for dinner with pretty much anything, and any time potatoes and onions are frying in a skillet, I'm a kid again and it smells like home. Thanks Rachel! ❤
