We traveled to Ireland back in 2004 with my parents and my father and uncle would find a pub when the girls were shopping to grab a pint and some chowder... He's 81 and my uncle has passed. I think I will make it this weekend for dad... He'll love it...
I made this today and it turned our well. I did make a few changes to mine. I couldn't find saffron so I used a pinch of smoked paprika. Instead of oysters I used clams. And since none of the seafood markets in my area sold fish bones or fish heads to make a fish stock, I used the shells of shrimp to make a stock. I look forward to adding this to my list of chowders, soups and stews that I make regularly. 😋 ❤
I just made this last night and it was fantastic! I added a can of chopped clams, the cod, and the shrimp. The lemon zest at the end is genius. Thank you

I'm happy with this recipe and the fact that l don't like to add too much flower, I like that you mentioned to blend the vegetables, carrot and celery if needed to thicken the chowder, well done, I'm making this tomorrow. I also as you do, prefer to make the Roux in the beginning to insure that the chowder doesn't lose its consistency the next day. Thankyou
I like the puréed potato to help thicken. My mom never used a roue, she just relied on the potatoes in the pot. I wonder if my husband would like your recipe. My mom’s recipe is to peel and dice potatoes, 1 diced onion put in large pot and add enough water to barely cover them(you can toss in a fillet or two of smoked cod or haddock if you want as well). When they are just about cooked add in your white fish, 1 can drained and 1 can un drained clams, 1 large can thawed drained frozen lobster, 1 lb small peeled and devastated shrimp or she used a frozen shrimp cocktail ring, 1 lb small Digby scallops, 2 cans of condensed milk. She seasoned with salt and pepper and of course Seafood Seasoning. About 15 mins before declaring it ready, she put 1/4 cup of butter in and stirred once it melted. I personally like the sound of your recipe because I more flavours

The way you thickened the chowder with no flour is the same as. I use for potato soup thickening. I use potatoes mashed up with a lil milk and add it back into the soup no flour. I grow thyme all variety’s. Ppl usually don’t realize it’s the thyme that give the chowdery tatse👍

You could use cornstarch to thicken it or stir in some mashed potatoes to thicken re gluten free.
