As a student with a limited budget I don't often find myself affording to make food with that much fish in it. Instead I add a few extra potatoes, a little carrot and maybe a little celery. That way the chowder is still hearty but more fitting to my budget. :)
I finally got around to making this chowder and it made my family think I was a genius in the kitchen of course I never will tell them where I got the recipe.
I am currently waiting for this to finish cooking ;D Smells so delicious. Couldn't get my hands on smoked haddock though. I put in some smoked trout, I hope it'll work out :)

Donal love your St. Patricks Day Colab with my favourite you tubers. My husband loves seafood chowder but this looks delicious, simple and hearty. I'll have to head out to Nicky's in Howth to get some fish might leave out the mussels don't like them but maybe add some prawns instead and make this tomorrow evening
Maybe a couple of mashed up anchovies and let them desolve away to nothing when cooking the onion and also add a pinch of smoked pementon (paprika) at the same time, that way you'll get the salty umami and the smokiness that the smoked bacon would provide, would be slightly different to an Irish style chowder, but potentially very tasty and would get a cool reddish color from the pimenton. Or you could just leave it out and it would still be very good, in fact a lot of recipes in Ireland wouldn't put bacon in any way, if you choose this option add carrots and turnip in for a bit of extra flavour
come on ! where are carrots? other veggies like celery? and no thinking ingredient added? it looks more like Finish fish soup rather than Chowder to be honest. But bacon added in the beginning was intriguing , might give it a try
I know it was five years ago lol, but in answer to your question, we don't have Yukon Gold in Ireland, the ones he's using are roosters I think, so use something on the waxier side rather than floury.

The Irish version of bouillabaisse! This looks absolutely mouth-watering. I would substitute the bacon with buttery lobster for a pescetarian version.
