I extracted lemonelo from lemons in my organic chemistry class at university. It was one of the most beautiful practice project I participated in my university. We Also did other stuff but extracting essential oils was my favorite.
PRO TIPS. use only the flower, not the stem. and NEVER use hose water. use only distilled water, or fine drinking water. the smell of that garden hose will end up in your oil!

As soon as water becomes steam, it IS distilled water. Tap water should be fine, any minerals and impurities should stay in the boiling vessel.
