Hey Becky, i have a tip for you and your viewers, about the sugar crystals. I was a pastry chef for over a decade and whenever I melted sugar like that, i put a well fitting lid on the pot, when I first put it on the heat, then bring to a boil. Remove the lid. The condensation "washes" the sides for you. I did this after many times accidentally seeding my sugar with the grains left on the brush. Merry Christmas and thank you for the videos!
Thank you! I’ve been making what a friend calls “chocolate caramel pretzel bark” but it’s supposed to have a toffee texture. I have done just about everything there is to do wrong, but this tip will help me so much! It’s delicious despite the mistakes, but I don’t want a grainy praline or a gooey mess…
@@kathrynwitte3398 you have the lid on before you put the candy thermometer in, while the sugar is still granular. It is not a good idea to put the thermometer in before the sugar is dissolved. It can potentially trap a grain of sugar and "seed" your candy .
You are truly one of the most organized cooks I have seen on the Web! So much fun watching this and it has given me so many great ideas! I made Christmas Crack yesterday with a home made version of thin mints and my neighbors literally "ate them up"! My husband just asked me if I were baking today....... of course!
Becky I love how detailed you are when giving instructions and even include what could happen if we don't do it like you tell us to. You might have missed your calling to be a teacher. If you and Josh decide to have kids you'll make a great mom for sure!
She’s amazing! For a detailed person, it’s very much appreciated. New subscriber! PS: This is the first time Ive heard it explained WHY you want to use a pastry brush and water around the inside of a candy pot. Thank you!!
I was a "campfire girl" back in the late 50's early 60's, then I was a "blue bird". lol. wow... such memories!!! I never thought to put chocolate on peanut brittle! mmmm You really look exhausted too! I got tired just watching you!!! lol and at MY age (72), that's not hard! lol. You really did an awesome job on wrapping those treats for your friends & co. thank you for sharing your day with us! I know I had fun watching! ... I couldn't believe that HUGE jar of chocolate bits you had! Thank you for sharing!!! Now get some rest!
Becky if you use a glass dish you could heat it in the oven for a few mins so it's the same temp as the hot candy you'll be pouring into it. Less chance of it breaking.
Becky i like the details you provide to help make successful treats. I usually put my cpokie sheet, for almond rocca, in the oven just enough to warm it. This helps to spread the rocca, also works great for peanut brittle. Sor SAFETY please put a damp towel or silione mat under your pots when you are working at the counter. It only takes a small distraction to have the entire pot fly off counter , and that Hot product goes everywhere , including people near by. Love your programs.
Peanut brittle has always been my moms signature candy. She had a specific pan and brush that were used just for peanut and nothing else. My dad even bought her a marble slab and inset it in the countertop so she could do the traditional stretching of the brittle. I always new it was getting close to Christmas when the house smelled like peanut brittle.
You almost made me cry. Those wonderful memories are such a treasure. My mom’s signature candy was divinity. I can’t see or eat a piece of divinity without thinking of her. Thank you for sharing. Have a lovely Christmas.
My grandpa who we lost last year always made his peanut brittle in an iron skillet. I need to find the recipe and make some this week. It was something he always looked forward to. ☺️
A couple of hints: when pouring out brittle, pour into disposable pie pans (buttered) in thin layer. Then when cooled you can put the whole sheet in a gallon bag, or break it up. My mother could have opened a candy shop...she was well known for her candies. She never used the spoon or spatula on the sides of the pan while stirring. Only stir the bottom. Same when pouring out candy into prepared pans. Then you can scrape the sides onto a saucer. Those are the family samples. This prevents and sugar crystals from getting into the full batch and turning the whole thing into sugar. She also swore to never make a double batch, it sometimes doesn't turn out. And finally, try to make candy on a clear day if at all possible. The extra moisture in the air will sometimes affect the candy, especially something delicate like difinity.
Yes, to all these hints! Another way to make an impressive peanut brittle gift is to leave the round whole instead of breaking it. If you use your pie tin idea, you probably could get three rounds per batch to gift, wrapped in saran wrap and a bow! Cute and Yum!
Carolyn, I lived in South Texas for several years. Perfect place to make divinity. The first batch I made, I turned the mixer on and started washing the dishes. I looked over and could tell the mixer was slower. At 5 minutes, the divinity was perfect to remove from the pan. It was so easy I made several batches, along with toffee and old fashioned fudge. I could have gone into the candy business, but I was too lazy!!
Watching you make your candy and cookies prompted me to make some of my favorites as gifts this year. I hadn't made any in a few years and you helped me get in the "Betty Crocker" mood.
I’ve made the saltine toffee cookies successfully and there is no need to wait before putting the chocolate chips on top of the pan when it comes out of the oven. Also, you can put a pan upside down on top of the chips. It will hold the heat in & they’ll melt in no time. The suggestion about the offset spatula was excellent. You don’t realize what a great tool it is until you actually use it.
Hi Becky. You could laminate your recipes then you can use a white board marker to write on any notes or mark out your progress. They wipe clean and are ready for next time in seconds.
Beautiful job Becky!! That was alot of work and care you put into your lovely gifts! Just a little hint from an 'Old Cook' if you put a bit of butter or spray oil on your cookie sheet before you lay on the parchment paper it will keep it from sliding so much. Makes it a bit easier. And folding a damp kitchen towel and placing it under a mixer or chopper/blender will keep it from moving about and keep it quieter. You are an amazing young woman and an excellent cook! LOVE watching your videos!
Sweetheart you are in desperate need of an offset spatula. Everything looks delicious. I might stay up tonight making those saltine things for my daughter's choir mates
I always make a last thing at night coffee and keep it for the following morning so I can slam it when I first wake up lol It's nice to know I'm not the only one who likes cold coffee.
I made your Peanut Brittle and Peppermint Bark along with a Peanut Blossom Cookie and put them in decorative Christmas tins to hand out to all of my neighbors this next week. Thank you for the tutorial!!!
My dad was in his 90s and had stopped eating a lot because he just couldn't taste much. I knew that sweet and hot are two flavors that are some of the last to go so I made pecan and finely chopped jalapeño brittle. We found that the jars of pickled jalapeños brought the flavors together better than fresh ones.
I absolutely loved your baking show The peanut brittle, almond Rocha candy peppermint candy. I loved your energy and how thorough you were walking us through your recipes. Thank you lovely lady. I wrote all those recipes down for next Christmas, or, any festive times.
Becky you're an incredible lady. I hope you have wonderful and given people who give to you the way you give to them. You deserve it. Never change you're a gift to us all.
I was a Bluebird and a Camp Fire Girl. I haven’t heard anything about that in years. Throwback memories. A side note about taking hot desserts out of the oven - never use flimsy foil pans. My mom had a foil pan fold on her coming out of the oven and the sugary pie ingredients spilled down on the top of her foot. It stuck and burned her pretty severely. Wearing shoes is important too. She had on slip on house shoes which were not much protection.
When you were chopping the candies, I was afraid you had forgotten the cookies in the oven again. Whew! You took them out, just not on camera. Thank you for sharing these. My mom always made the Russian Tea Cakes and they are still my favorites.
*Baking tip I just learned this year! Spraying the cookie sheet with a little oil or greasing it with butter will hold the parchment paper still when you’re trying to spread things like toffee.
I am so glad I found your channel. You are making all my favorite candies and you are doing an amazing job. I really enjoy watching all the delicious things you make. Thank you!
I tend to hi-light key temps so my eye quickly finds it on the page. I also draw a line through major steps, like the difference between two bowls being mixed separately. Liking your recipes 😁👍🏻
I actually like that you've made the peppermint candy thing upside down. I don't like white chocolate but love milk and dark chocolate and it usually deters me from trying new things when I see white chocolate but yours looks good and I definitely want to try
This is the first year in over 10 years that I haven’t constantly been baking from halloween until the new year. I would make dozens upon dozens of cookies and fudge every night. This year I was just over it. I’ve baked a few times but I’m mainly trying to empty out my baking pantry for other things
I am so thrilled for you (and us who benefit) that you are doing this full-time now. I will be making and sharing some of these goodies!! Awesome video/series. Thank you!
I've seen people make peanut brittle and they clean granite or quartz countertop and lightly spray it with Pam, and dump the brittle on the countertop and spread quickly with a Pam sprayed off set spatula. The coolness of the countertop hardens it quickly and they break apart. It may be easier than fighting with parchment paper.
Omg, perfect timing! I was just writing out the ingredients I need to make our Christmas cookies and treats! I love sweet and salty so I'm definitely making the saltine candy 🤤😍
You're amazing! Thanks so much for this. I made the saltine toffee for the first time ever and I'm 60 years old. I think it will be in my regular repertoire now
Your time management skills are enviable. I've never had almond roca or saltine toffee, I'm going to have to add these to my Christmas gift repertoire. Thanks for sharing!
I used to spend days in the kitchen making Cookies and candies but I don't have that much energy anymore..I wish I had your energy and got this much done.
This looks absolutely delicious! There’s definitely a culture difference when it comes to Christmas cookies and candy, can’t wait to try some American ones for my Swedish Christmas table this year 🥰
Hey thanks for some great ideas! I was surprised that you don't have trouble with the chocolate seizing when using "extract" since it has water in it. I was told to always use "oil" when flavoring chocolate! I do this with orange oil and orange candies calling them "Orange Meows". Wonderful if you are fan of orange chocolate.
I make lots of peanut brittle at Christmas time and alway pore mine out on parchment paper. Doesn’t stick nothing to wash and don’t have to worry about breaking any bowls!
That’s great to know! I was going to ask the same question of print button! I want to try the peanut brittle but I’m thinking Since cashews are my all time fave, I’d use that instead of roasted peanuts! I’m so nervous of boiling sugar as this would be my first time but reading all the tips I will be ok! Thanks so much Becky! I’m glad I found your TH-cam channel and you explain so nicely and detailed out! Merry e!
This was the first time I ever saw one of Your videos. I did give You a like and Subscribed to Your channel. I love Your energy and how well You Managed Your Time. I think that The “So-Called mistake” that You think that You made with the White and Chocolate Peppermint bars was not a mistake at all! I think that the crushed candy canes or peppermints look prettier on the semi-Sweet Chocolate side. I am not a huge fan of Peppermint and chocolate but I do like it. I think that it was prettier and won’t have such a punch of peppermint in Your mouth the way that You made these beauties. Thank You for sharing Your Candy making talents with Us. I look forward to seeing more of Your videos. BLESS YOU AND YOUR FAMILY!!! ✝️🙏🏽❤️👍🏼 You are a Great Candy Maker!!! 😊💕👍🏼👋🏼 REMEMBER HE IS THE REASON FOR THE SEASON! ✝️🙏🏽💕👋🏼 MERRY CHRISTMAS!!! ✝️🙏🏽😊💕🎅🏼💕🤶🏻❤️🎄❄️☃️🛍👍🏼👋🏼
You are so sweet and thoughtful Becky, everyone there is lucky to have you in their lives And we are glad you share yourself with us too :) It’s been amazing to see your channel explode, you deserve it. Merry Christmas.
I have been obsessed with watching holiday treat videos the past couple of days, so yours came up in the algorithm. I'm in awe of your ability to multitask - quite daring when doing candy! I really ought to get a candy thermometer and give some of these a go. I've done almond roca and the christmas crack before by crossing myself and offering up a prayer. Worked half of the time, the other half we don't speak of. LOL.
Technically, what you have are "half-sheet" pans. Half of a commercial full sheet pan. I have 6 of them. They are wonderful to have when making large quantities. I learned from Marth Stewart videos to keep a bowl of Ice water nearby when you are working w/ boiling sugar. If you do get hot sugar on you, plunge your hand in the ice water right away to stop the burning. I suggest you invest in a long off-set spatula. It will make it easier to spread your chocolate or brittle to a thin layer. I'm a retired cake decorator. The bakery I worked for sells a cookie tray for $50+ dollars. You gave great gifts to your co-workers.
Hmmm, I don’t think her sheets are commercial full or half sheet. I have half sheets and Becky’s appear longer but not that much wider. I looked on Amazon, and commercial full sheets are 18x26, half sheet is about 13x18 but they also sell sheets called big sheets or 2/3 size 😂 that are 15x21. That might be what Becky has.
You did a wonderful job and I had to smile when you said you didn't make enough I do the same thing every year lol. I absolutely love making up gift baskets for my friends and neighbors.. it's my favorite time of the year is spreading cheer. I started out many years ago making these up for my elderly neighbors who are no longer able to spend a lot of time in the kitchen or have the money to do it and also my single guys in the neighborhood who don't really know how to make cookies/candies/jellies they so appreciate my little surprise packages ( I sneak early in the morning and do a porch drop off). Now I have more ideas for next Christmas Thank You and your presentation was beautiful. Anna In Ohio
Thanks for making these recipes so easy to access; I really appreciate that, I hate having to look through stuff to find a recipe lol. Love you and your videos💜☺️.
I know this video is an older on (in the old house), and those almonds are LONG GONE, but if that ever happens again, just roast the pieces... you'll have to watch them a little closer, but there will not be any waste. Been a fan for many years! This video also brings back nostalgic memories in this kitchen of when you told Josh you were expecting Baby A!!!
Becky my dear I just screeched. After a long day of working and it's almost 11 at night. You bring so much joy to me I'm 34 a mom of 3 girls working fulltime as well and zero time almost* for me till I came across your channel. Girlfriend I hope you read this cause you deserve it all
Hi Becky, I just found your channel because of Jess from Roots and Refuge. She spoke highly of your channel and all the good things you share. I am not a cookie maker, but have learned a lot watching this video. A tip I use for anchoring a recipe in place while I follow it is to use a magnetic to hold the recipe onto the front of the microware. It works like a champ! Happy New Year 2022!
So fun! I love making candies and chocolates this time of year. I had a group of friends and we did a chocolate day and all worked together to create enough chocolate for each of us to go home with boxes and boxes of gifting chocolates.
I don’t know where you live, but humidity makes a big difference weather your peanut brittle is sticky or breaks like glass. The faster you cool it the better it is. My grandmother taught me how to make it the old fashioned way. Quickly pour it on the pan, quickly spread to desired thickness & lay the pans on the snow outside til cool. Wipe snow off bottom of pan. Bring it in & break into pieces. The consistency is amazing.❤
Reading through some comments it's nice to see people giving their tips and this is why I love TH-cam it's a place of sharing,giving,community...good job Becky 🙏💝🎄
It was nice of you to leave nuts off of the saltine toffee. I'm allergic to nuts, and several other things. This time of the year I'm always chasing down who made what to double check the ingredients.
Becky and her cute little slippers practicing safety first by grabbing that metal tray. Hehe I hope you have a beautiful holiday. Congrats on your years success. I’ve loved watching you grow and your journey here. 💛🎄
Becky I love your dad. He reminds me of my sweet daddy who was always up for my all my wacky projects. As far as cooking he couldn't boil water but would help me do anything I asked. Enjoy your parents. I miss mine everyday.
Almond rocas are my fave but I haven’t been able to eat them since I developed a ton of food allergies. I didn’t even know I could make them at home, so I am going to attempt it at some point and try to make them allergy friendly for me to eat.
You can toast nuts even if they have been chopped. Beautiful gifts to give and so easy, to make. I’ve made nougat before. You have to move fast with that and have everything ready.

There’s definitely a culture difference when it comes to Christmas cookies and candy, can’t wait to try some American ones for my Swedish Christmas table this year 🥰
You should share some of your Swedish Christmas treats!
God Jul
Wohelo!!!! I was a Campfire Girl too in the early 1960’s.
Becky I love all of these recipes! I wish you had a print button on your scratch pantry. That would be very helpful! Merry Christmas!
Hi Linda, in a recent video Becky said her hubby is working on her new site and it will have a print button 🥳
Merry e!
I really love your videos. You are such a lovely person and love how your videos are so helpful. Your house and pantry is awesome too
Sweet and salty - be still my heart!
YES!! SO GOOD!!
You are a Great Candy Maker!!! 😊💕👍🏼👋🏼
REMEMBER HE IS THE REASON FOR THE SEASON! ✝️🙏🏽💕👋🏼
MERRY CHRISTMAS!!!
LOL.
Saltine toffee is also known as Christmas Crack. We have it every year, it’s always a big hit and so easy.
For the saltine crack candy I like to put mini red and green m&M's over the melted chocolate for christmas .
Wow thank you Linda!
I was wondering because I have a full sheet pan and it is HUGE. My Mom was a caterer and I inherited lots of her stuff!
@@villagesteader3552 The off-set spatula will be another 'game-changer' for Becky. Highly recommend getting a few sizes.
@@colleenc1010 yes in at least 2 sizes.
I just made the Christmas "crack" last night... wow Is it addictive lol. Super amazing! Love the peppermint on top!
It's so good!
I usually use a bit of butter on the sides of the pot before making candy, so sugar crystals don’t adhere, too.
That all looked absolutely amazing. It sure did inspire me to make some of that delicious candy and cookie treats. Thanks so much!!!!!
To spread hot candy, place another piece of parchment paper on top and use your rolling pin.
Made cranberry orange pinwheels this morning and making Needham's this afternoon. I have tons of cookie dough in the fridge waiting to bake.
Needhams! Are you in Maine too? My dad’s favorite!!
Molly, I love anything cranberry orange! Is this a recipe Becky has uploaded, or is it one of yours?
Love it! Campfire Girls! I still have some of my beads! Love your videos!
Everything looks so good Becky!! 😍
LOVE the saltine toffee, def try it with Ritz crackers sometime. AMAZING
Hahaha! I was a Camp Fire Girl probably 45-50 years ago! Many good memories and lifelong friendships. Merry Christmas!💖🎄
Becky and her cute little slippers practicing safety first by grabbing that metal tray. Hehe I hope you have a beautiful holiday. Congrats on your years success. I’ve loved watching you grow and your journey here. 💛🎄
The sound of the peanut brittle!
What a great surprise for them. Love the packaging you did.
Fisher Scientific for thermometers. Calibrated and lab tested. I worked for pharm company for 37 years. Just retired and now tending homestead. LOVE channel!
