      my favourite food is rib eye medium with grilled vegetables and pepper sauce :D i dont like italian kitchen much, because many of their ingredients im not eating, but anyways great video as always Anna

      I will have to go for a Savory Cheese Soufflé (must be the correct cheese), served with nice vegetables, a tasty sour cream dressing (or similar dressing) and some fitting stoneoven baked white bread w/butter :-)

    Actually, I have tried most of them, and make some of them myself.
    The latest newcomer was abbacchio a couple of years ago. Absolutely delicious!
    Here in Sweden, "cornetto" is actually "croissant"! And for me, coffee destroyed by milk - never! We call it "gruel for grown-up babies" ...
    Fior di succe - wonderful, but here in Sweden not so easy to get hold of the zucchini flowers unless you grow zucchini yourself. A shame really.
    We discovered another sublime primo (or light lunch, in our case) in Rome, not far from Campidoglio. Bruschetta con mozzarella e acciugi. Just that! Easy to make at home, and wonderful. Whether Roman or not I don't know.
    The very best pizza I've ever had was actually very many years ago, in 1974, when there was an outlet, just a hole in the wall, close to Piazza Venezia. And it was - a Margarita!
    Cacio e pepe is sublime. There is only one pasta that I consider better, and that is the Piemontese "Tajarin ai Tartufo Bianco". That's heaven!
    Saltimbocca also belongs to favourite dishes to make at home.
    Coda Vaccinara is also a wonderful choice!
    One kind of verdure that we found first in Rome was actually Cicoria. A must if you like bitter flavours.
    I'm happy though that you didn't suggest Trippa Romana ... I've tried it twice, and that's quite enough for me ...

    Good video, but you forgot the most important traditional roman meal, artchoke: carciofi alla giudia is traditional roman jewish recepy, with artchoke fried and carciofi alla romana, artchoke stew. It's fantastic

    Bravissima, very good, bellissimo video! Among the appetizers I would also add the fried cod fillets and the real dessert of the Roman tradition: the Maritozzi, which today are made with cream, but once they were prepared with pine nuts and raisins. The name, Maritozzo, derives from the fact that the girlfriends prepared it for future husbands during Easter (in fact it is also called quaresimali: la quaresima is the forty days before Easter, to purify oneself from sins). And the Pizza al taglio, bianca o rossa, with tomato: the white soft, and the red "bella scrocchiarella"!

    Other important traditional roman dishes are 'Trippa alla romana' and 'Carciofi alla giudia'. In Rome there is (when it's possible to find it) also a very good black bread (that i love), his name is 'Pane di Genzano'. Regards from Tuscany.

    Fiori di zucca are fried in all South Italy for sure. Different recipies of course. In my opinion the best are fiori di zucca without mozzarella, I like them with hot peppers as side dish with meat.

    Btw next time I suggest you to visit Abruzzo, is my region we have many dishes you will love for sure! Plus is the most green region of Italy! We have many wonderful places!
    I really recommend you to eat "pasta alla termana", the only one italian pasta dish with meatballs, the "arrosticini" they are lamb skewers cooked on coal, the "brodetto di pesce, a fish soup with tomato,
    "pasta alla mugnaia" a thick tagliatella with a special tomato sauce and many many others

      Non è che ci alziamo tardi. È soltanto che la colazione la puoi fare massimo fino alle 11. Perché dalle 12 in poi, è Ora di pranzo. Ovviamente,una persona che si alza per andare al lavoro farà colazione tra le sei di mattina e le otto. A seconda di che ora inizia a lavorare.

      @@AnnaGoldmanTravelpenne all'arrabbiata (non pennette) is a short type of pasta with spicy (chili pepper) sauce. if you don't love chili pepper tell the waiter to not go too far with the chili sauce. you also could taste pennette (in this case pennette is correct) with vodka.......

      Next time you're in Rome try to get a reservation at the Restaurant Alfredo Alla Scrofa in via della Scrofa and try the "fettuccine all'Alfredo" also known as Fettuccine Alfredo except that theirs is the original recipe , many Italians think it's something invented in America but it's not , it is very much an Italian dish most Italians would identify as: Fettuccine (or Tagliatelle) al Burro e Parmigiano , a dish invented in the XVI Century , what Alfredo De Lellis did in early XX Century was to give it a special mixture of cheese that they mix right in front of you at your table (and yes I've been in there) and the fettuccine are a little larger than usual , they really are delicious .
      I'm really surprised you didn't try those

      you could mention "carciofi alla giudia too. jewish style artichokes. it's a recipe invented in the roman ghetto , but by osmosis it's part of roman cuisine nowadays

    Cacio e Pepe also utilizes pasta water so 4 ingredients. To finish the pasta in the pan and to make the sauce with finely grated pecorino.

    When I first got to Rome very long ago, tiramisù was still considered very un-Roman, albeit very good. Then it became an absolute craze, with everyone ordering it, and making it at home, and coming up with variations and so on. The early nineties was an absolute tiramisù orgy (something like penne alla vodka). Then things settled back down. I'm not a dessert guy so the whole thing went unnoticed in my culinary life.

    I wondered cornett was 1st ,or cornetto was ,so googled !! Lol. Cornet was invented in France in 1645 & brought to Florence ! However ,Italians said they existed in Italy already since 1525 originated in Venice !!! Lol. So ,we're not 100 % sure !! Lol. But , either way they're real yummy ( I only know ? cornet unfortunately ) & both have a long history !! Croissants were originally invented in Austria !!!

    Hi again from Seattle! Have you been to Ireland yet? They have fantastic dairy products and seafood, and put unsweetened whipped cream on a lot of things, including soup! Don't go in winter, though; it's very wet and windy all winter. You will spend long hours in pubs over hot toddies. I spent an entire school year in Dublin in 1984-85, so I should know... :)

    There Is One more type of Pizza: Pizza al tegamino that Is very popular in Turin. BTW panna cotta and tiramisù are both from Turin.

      No, tiramisù is a dessert from the North-East. Still debated if from Veneto or Friuli. Probably from Treviso.

    black olives in amatriciana? O.o mmmmm nope :p Amatriciana has 3/4 main ingredients tomato guanciale pecorino cheese - black pepper or red chili pepper

    It's funny that the presenter says "bucatini or spaghetti all'amatriciana" and we're immediately shown some rigatoni. Nothing un-Roman about rigatoni - I've been here for 35 years and have seen plenty of rigatoni all'amatriciana. But you had just said "bucatini or spaghetti"!

    Nice video Anna, but let me set the cornetto debate straight:
    It's called cornetto, period. What they call it in Milan doesn't count, a brioche is something else entirely. A note for the future: whatever you see, test and taste in Milan, is not even remotely something worth of notice: Milan and Milanese people barely qualify as italians. The whole notion of "brioche" instead of cornetto and the way they pronounce vowels in words (totally wrong, but they are convinced to be right...) immediately disqualify them from being true italians. Only legally, because of the unification and blah blah blah...
    Keep going to Rome and souther, and just forget about the North of Italy: that's not The True Italy. Rome is, as it is the craddle of civilization.
