I have made 'vanilla wafers' at home and sandwiched them with a little peanut butter, then dipped in chocolate. They ended up tasting like Girl Scout Tagalongs! They definitely weren't keto though. Janet, is the consistency of your dough strong enough to roll out gently and use cookie cutters on it? Thanks for the recipe; definitely going to try them! Also thanks for the tip on adding cocoa powder.
@@AccioPadfoot12 The consistency of the dough should be sturdy enough to roll out. If it seems like it's not wrap it in plastic wrap and chill it for a few minutes and it will firm up

@@IlovemyGod350 This dough is pretty firm on its own. You can try using a little xanthan gum but it generally makes the dough a little sticky and can effect the texture of the cookies
@@voodle50 Coconut flour can be tricky because it's so absorbent. It took me a lot of trial and error before I could make coconut flour baked goods that are moist.
The title says nut free but you use coconut flour. It's hard for someone doing keto that has nut allergies, everything seems to have almond or coconut😕

I have recipes that use sunflower seed flour, bamboo fiber and/or other nut free flour if you would like to check out those recipes

Im in the same boat with nut allergies, and eggs, and dairy, and living the low carb lifestyle
