    Thank you for the recipe. Please, pretty Please can you eat or break the wafers to show how crispy they come out. Like to know before I attempt baking it and wasting ingredients.

    I really love these!! I can make a mock banana pudding! And, a lemon meringue pie!! I used to love to spread peanut butter on them and make a little cookie nut with! 😋 Thanks Janet!! Love ya!! ❤💙💜

    Thank you so much for this! We have some really great eggs from a family friend and im trying to get my son off of too many carbs and sugar because he has dental issues. Vanilla wafers in one of favorite snacks. So glad this includes butter too because hes a bit on the thin side and so monay sugar free foods are low cal. Can you use sugar free pancake syrup to substitute for the liquid sweetner?

    Janet why would you not mix all the wet ingredients together first and add them all at once to the dry ingredients?

      You can do that. I like to add them separately because coconut flour is very sensitive to liquid. It is VERY absorbent. Adding the wet ingredients separately helps have more control over the texture of the dough

    Did the monk fruit give a cooling effect to this dessert.? I have heard Monkfruit does have a cooling tasting effect.

      I didn't notice a cooling effect in this recipe but I use monkfruit all the time. I really only notice the cooling effect if I use a lot of sweetener.

      You can use coconut oil or any vegan butter to substitute the dairy butter. The best egg substitute for this recipe is flax eggs.       The taste and texture may be slightly different if substitutes are used but they will still be tasty

    Thank you Janet. These look delicious, I will be trying these soon. Kinda confused how the recipe would work for a pie crust, wouldn’t it be mush if you don’t bake it? I’ve eaten pie crust (not keto) that’s like vanilla wafer and it’s delicious but they are baked first then filled with a creamy filling. I need help!!
