You can make flour from anything you can dehydrate. I've made spinach flour, chicken flour, beef flour, carrot flour, & egg flour. They are all great for different uses.

I wish that seeds of high-oleic sunflower were available (maybe they are, but I’ve never seen sunflower seeds labeled that way). Regular sunflower seeds yield an oil with fatty acids that are about 59% lineoleic. That’s just a bit much for my liking. Maybe I shouldn’t worry…

I made biscuits with your flour recipe using the Dream biscuits recipe from American Test kitchen. They turned out pretty good and I have had them for breakfast every day this week toasted with butter. They were good with keto maple syrup. I also made up some softened butter mixed with stevia and cinnamon. The biscuits were stayed soft, moist and browned easy.
Well now I have to use my red bowl. It works like your yellow bowl and makes great food all by itself. Thanks for sharing your Keto flour recipe. I’ll have to try this this holiday season.
I keep mine in the pantry, but I use it up within a couple weeks. Just due to the flax in it, I would recommend using within a couple weeks or keeping in the fridge

New to your channel and just subscribed. I have been on Keto for while. I have maintained my weight loss for 3 years, however, my dr. convinced me to go back on my BP meds due to it being elevated every time I saw him. Unfortunately, I also, at that time, backslid and have been eating more and more carb-charged food. Now I'm having some issues which led me to ditch the BP meds again while trying to go back to strict IF & Keto. Therefore, this recipe is vital for me. My question is: is there any room for vital wheat gluten in this recipe, or is the "wheat" portion of it a strict no-no (4 carbs in 1/4c.) Thanks!
Welcome and thank you so much! Hope you find a lot of great things here that you will enjoy... So the problem for me is not necessarily the wheat part because the carb count is fine. Have you ever had any allergy tests done to see if you have gluten allergies? If so, it can cause inflammation and cause issues. Or, have you eliminated it for a while on your diet and then added it back and notice any issues? I don't necessarily say there's anything you strictly can't have as long as you keep the carb count down, but if it's an ingredient like that and it could cause inflammation, I would be extremely cautious, especially since blood pressure was the issue with you just like it was with me...
Make sure you don't have white coat syndrome. I saw a new doctor that wanted to put me on BP meds. I knew my BP was usually fine, except for when I had to drive in traffic and go to the doctor and have the doctor tell me I'm fat lol She had me monitor it at home and when I went back she said it was unbelievably good for me being overweight 😂 Unfortunately, I think a lot of people are put on the medication at the first visit and not monitoring it at home first to make sure it's really needed.

Thanks for the tips to swap out the almond flour with sunflower seed flour (and acid) for those of us with sensitivities to nut flour. I am also someone who tastes fish in omega 3 bearing stuff like flaxseed (even when recently produced and kept in the freezer). What can that be replaced with since it is both flour volume and binding - a little more sunflower seed and a little more gelatin and xanthan gum or something else entirely?
Baking freaks me out. Especially keto... I've made ur flour. So if I want to use this flour blend to make muffins (pumpkin) All my dry baking stuff should already be mixed (flour, baking soda/powder ... and only need the measured amounts (1-2 cup flour blend) CORRECT? 🙏🏼
I made this to replace regular flour. So if anything calls for baking powder or baking soda, You should add that. Anything that calls for flour, just replace with this.
You could add about two cups extra almond flour and try it, but I'm not sure results will be the same 😔 I used coconut flour from the beginning because it absorbs liquid so well, so it makes the texture of things a little bit spongier and makes up for the almond flour not absorbing as much liquid.
SK, I put your flour together and used the recipe on the back of the Nestle Semi-Sweet Chocolate Chips. I substituted all sugar for Splenda. I used the amount of butter they call for but next time I will go half as much. They turned out delicious but a bit oily. Guessing your flour doesn't grab the butter and hold it like regular flour. So, heck there could even be less calories! Thank you for the flour recipe. I'm going to try many more things with it. I too like to experiment.

I am so excited to try this new flour. The one I use now contains bamboo fiber, but the results are very inconsistent. I have been trying to get a good full size chocolate and vanilla cake recipe for a while now, but they end up gummy and dense. I will experiment some more with your flour. Hey, I'm working on a white sandwich bread type recipe with this. The other brand I designed to be a full meal with just two pieces of bread, some meat, and whatever toppings you want. The new one with this flower will be more like a Sunbeam or Wonder Bread type thing. Not as filling as the other one. 😁
Have you tries lupin flour?. So far I've made tortillas and they're easily the most like wheat flour I've had. But my so-called skills are limited and can't figure specs for cakes or bread, cookies, etc.
I haven't. I thought about experimenting with that, but I haven't yet. My thought was replacing half of the almond flour with that, but I never ordered it because I was trying to make something that was easy for people to go to the grocery store and get all the ingredients for. I don't have any stores near me that carry it ...

This is coming from my own experience being a cups and measuring spoon person to, in the last decade, changing to scale for certain things……..I measure in cups etc when there’s only one or two items and they can both be measured in the same cup….but when there are several, I prefer grams/oz. Put each dry ingredient in a bowl right from the container or bag and tare in between. I skip weighing out salt and just pour that into my hand to measure. Lol. Have you used vital wheat gluten in any recipes? I have some and I’m not sure how to use it. Thanks for all your dessert recipes. I, too, have to have dessert. 😉

@@wmichaelh29I definitely do in the bread and a lot of other things. I tried using just baking powder, just cream of tartar, just lemon juice... A lot of different things and cream of tartar does provide the acid in baking powder, but it worked better for the bread using both for some reason

I’ve only recently started subbing in sunflower seeds for the almond flour. Makes the bread school lunch friendly when your kidlet is schooled in a nut free zone. FWIW, kids get a big kick out of green bread. In fact, Grandpapa thinks green bread is hilarious. ❤❤❤

Normally, yes, I grind fresh flaxseed as I need it. It just lasts longer that way. This time, I had to get the already ground kind which is fine... Just keep it in the fridge. I always recommend getting carb manager or MyFitnessPal so you can put in the exact ingredients you use for accuracy.
@@southernketo I already know I will make bread/biscuits. That is what I do with the other. I use a scoop and drop my dough into silicone molds, not sure what they are called but I call them whoopie pie molds. It lets them all rise consistently like hamburger buns. I have an adult special needs child also on keto with me for three years. Things that are "normal" yet have portion control work well for us. So the biscuits work better than a loaf, that kind of thing. Sweet, frozen treats in portion control freezer cups, etc. Thanks again for sharing your hard work with us.
I'm going to try this mixture. The one I use now contains Bamboo Fiber. With myself and great grandson being Celiac it can get pricey. Your looks like a good wheat flour not the all purpose white that has been chemically modified now days.
@@babsblan Yes Victoria’s flour blend. It’s very good but you use sparingly because of price and availability. The bamboo fiber is sold out a lot of times. So the price of the ingredients is getting to be too much.
That is a good blend for a flour to use for keto goods! I use a carnivore blend myself that is zero carbs, but I bet this works great for keto! Good job!

@@southernketo yes ii soak pepper corns in bourbon for 7 days shaking in a mason jar each day they will swell up . After 7 days I lay out on a cookie sheet covered with paper towels and pat top with more paper towels then lay in warm place and move them around every few days for a while and change paper towels on bottom once for like 4 days . Then grind
I would recommend using my other bread recipe for now, because I haven't had a chance to test it out. You can just substitute the almond flour for the pork rinds in it if you want and just use the one stick of butter. You can also substitute pork panko or sunflower seeds In places of the almond flour. Someone had mentioned lupin flour also was reminded me that I was initially playing with the idea of doing half of it as almond flour and half lupin. I think that would work fine too 😁

I know you could use honey or maple syrup, but some people are not going to have those on hand because of all the sugar, even though the yeast eats it. I can't wait to hear back. 😮

@@markiangooleyjust curious why you don't like linoleic acid. It lowers cholesterol and blood pressure and is an anti cancer fatty acid

Or, have you eliminated it for a while on your diet and then added it back and notice any issues? I don't necessarily say there's anything you strictly can't have as long as you keep the carb count down, but if it's an ingredient like that and it could cause inflammation, I would be extremely cautious, especially since blood pressure was the issue with you just like it was with me...
Make sure you don't have white coat syndrome. I saw a new doctor that wanted to put me on BP meds. I knew my BP was usually fine, except for when I had to drive in traffic and go to the doctor and have the doctor tell me I'm fat lol
She had me monitor it at home and when I went back she said it was unbelievably good for me being overweight 😂
Unfortunately, I think a lot of people are put on the medication at the first visit and not monitoring it at home first to make sure it's really needed.

Thanks for the tips to swap out the almond flour with sunflower seed flour (and acid) for those of us with sensitivities to nut flour. I am also someone who tastes fish in omega 3 bearing stuff like flaxseed (even when recently produced and kept in the freezer). What can that be replaced with since it is both flour volume and binding - a little more sunflower seed and a little more gelatin and xanthan gum or something else entirely?
You get substitute for chia seed instead. I wouldn't mess with the other ratios unless you can't do chia either

I made this to replace regular flour. So if anything calls for baking powder or baking soda, You should add that. Anything that calls for flour, just replace with this.

You could add about two cups extra almond flour and try it, but I'm not sure results will be the same 😔 I used coconut flour from the beginning because it absorbs liquid so well, so it makes the texture of things a little bit spongier and makes up for the almond flour not absorbing as much liquid.
SK, I put your flour together and used the recipe on the back of the Nestle Semi-Sweet Chocolate Chips. I substituted all sugar for Splenda. I used the amount of butter they call for but next time I will go half as much. They turned out delicious but a bit oily. Guessing your flour doesn't grab the butter and hold it like regular flour. So, heck there could even be less calories! Thank you for the flour recipe. I'm going to try many more things with it. I too like to experiment.

I am so excited to try this new flour. The one I use now contains bamboo fiber, but the results are very inconsistent. I have been trying to get a good full size chocolate and vanilla cake recipe for a while now, but they end up gummy and dense. I will experiment some more with your flour. Not yet. I've added yeast into my other bread for taste, but I haven't added any sugars to it to feed off of. I plan on doing that with this Flour when I have some time to mess around with it

Hey, I'm working on a white sandwich bread type recipe with this. The other brand I designed to be a full meal with just two pieces of bread, some meat, and whatever toppings you want. The new one with this flower will be more like a Sunbeam or Wonder Bread type thing. Not as filling as the other one. 😁

Have you tries lupin flour?. So far I've made tortillas and they're easily the most like wheat flour I've had. But my so-called skills are limited and can't figure specs for cakes or bread, cookies, etc.
I haven't. I thought about experimenting with that, but I haven't yet. My thought was replacing half of the almond flour with that, but I never ordered it because I was trying to make something that was easy for people to go to the grocery store and get all the ingredients for. I don't have any stores near me that carry it ...

I did a deep dish fathead dough pizza using your flour.I should have took a pic it looked very good. It had an earthy taste so to speak. Maybe not for everybody but great for me. This is coming from my own experience being a cups and measuring spoon person to, in the last decade, changing to scale for certain things……..I measure in cups etc when there’s only one or two items and they can both be measured in the same cup….but when there are several, I prefer grams/oz. Put each dry ingredient in a bowl right from the container or bag and tare in between. I skip weighing out salt and just pour that into my hand to measure. Lol.

@@wmichaelh29I definitely do in the bread and a lot of other things. I tried using just baking powder, just cream of tartar, just lemon juice... A lot of different things and cream of tartar does provide the acid in baking powder, but it worked better for the bread using both for some reason

I’ve only recently started subbing in sunflower seeds for the almond flour. Makes the bread school lunch friendly when your kidlet is schooled in a nut free zone. FWIW, kids get a big kick out of green bread. In fact, Grandpapa thinks green bread is hilarious. ❤❤❤

Normally, yes, I grind fresh flaxseed as I need it. It just lasts longer that way. This time, I had to get the already ground kind which is fine... Just keep it in the fridge. I always recommend getting carb manager or MyFitnessPal so you can put in the exact ingredients you use for accuracy.

@@southernketo I already know I will make bread/biscuits. That is what I do with the other. I use a scoop and drop my dough into silicone molds, not sure what they are called but I call them whoopie pie molds. It lets them all rise consistently like hamburger buns. I have an adult special needs child also on keto with me for three years. Things that are "normal" yet have portion control work well for us. So the biscuits work better than a loaf, that kind of thing. Sweet, frozen treats in portion control freezer cups, etc. Thanks again for sharing your hard work with us.

I'm going to try this mixture. The one I use now contains Bamboo Fiber. With myself and great grandson being Celiac it can get pricey. Your looks like a good wheat flour not the all purpose white that has been chemically modified now days.

You could use the same amount of ground chia seeds and soak them in a little bit of water. It won't work as well, but it should work well enough

What if you are allergic to Coconut and Almonds.. what substitutes for these? Almond flour you said sunflower seed flour.
There really isn't a good substitute for coconut flour in this blend because it absorbs so much moisture.

After 7 days I lay out on a cookie sheet covered with paper towels and pat top with more paper towels then lay in warm place and move them around every few days for a while and change paper towels on bottom once for like 4 days . Then grind

You can also substitute pork panko or sunflower seeds In places of the almond flour. Someone had mentioned lupin flour also was reminded me that I was initially playing with the idea of doing half of it as almond flour and half lupin. I think that would work fine too 😁
