    There is certainly an art form to cutting up these beautiful giant fish. So amazing to watch those knife skills and how incredibly sharp they all were. Puts a whole new meaning to cuts through like butter.

      Well technically to artful one must have artistic expression. Cutting up a 500kg Tuna will be very similar to 200kg Tuna. If you cut a fish the same way hundreds of times, if different people cut it the same way, is it really art or just a method?

      The name of the 3 foot tuna carving knife is a maguro bōchō. I import them for AUS fishing industry. Reputable Taiwanese black smiths like Master Kuo sell them to me at AUS$1000-1350 and AUS$500-700 for the circular Tuna knife.

    Well done Taiwan👍🏻 🥇. I have always thought Japanese knives and skills were tops as they claim. But really this outshines them. Brilliant knife skills and what a genius knife shape. Clearly the best. Some Japanese and Koreans have to use saws or a hammer to help them cut through the bones and their cuts through the flesh is not as clean. But for plating, I still think Japanese and even Korean plating of Sashimi is still better. C’mon Taiwan, finesse your plate, it’s the last step and frankly the most important. Just put on a little more care and a lot more showmanship. You are already a Maestro.

      Yes, he was a bit sloppy and inconsistent with his cuts. Japanese chefs tend to make more precise cuts and don't waste as much.

    I'm not a big fan of fish but a friend talked me into trying a bite of a fresh(swimming four hours earlier) tuna steak(grilled, never raw) and it was absolutely fkkkng delicious. I ate the whole steak 😋
    Amazing what FRESH can do for fish.

    Ohh!!!... what a magnificent fish!... and she was a hard fighter , judging by the amount of "cooked "blood in the meat... back in the eighties I was a commercial fisherman on a long liner and we were catching them off the Grand Banks, Georgia Banks and PR... It was a hard job but we were paid excellent money back then... 1980... today sword fishing longlining and tuna fishing are not the same ...:-)))))))

    How long does it take to become a master carver of giant tuna? The product is very expensive and I'd think the Carver must be cognizant that each cut and slice must preserve as much of the quality cuts and filets as possible. These cutters are magnificent.😊

      @@erinkemp1004 Well the devil is in the details for me, i watch videos like this out of curiosity too, and it's still interesting to watch even tho the tuna doesn't weight 500kg's. However i will just never understand that people seem to see it as a necessity to exaggerate everything, even if it's proven wrong in the video, twice. It just doesn't make sense to lie about it, and i will never understand it, not that i want to understand it, i just stated my thoughts if you will .

      @@k4kes well I know that some people do struggle with English and they unintentionally type the wrong thing. They do correct it when someone else points out the mistakes. But for some who purposely type the wrong thing out and don't correct it. Says a lot about them when don't correct the mistakes. As annoying as it is some people just don't care about doing or typing things incorrectly. Not much we can do about it since they won't listen

    Even those nylon gloves can be put through rollers to squeeze out liquid and slime, not to mention a squeegee helps to clear the deck.

    What blade is he using? So sharp. I came from watching some high end restaurant using dozen specialise blade. Even then, the struggle is real. Here he just cut it effortlessly. Pretty amazing
