為什麼辛苦去鱗片後 又要把皮切掉 怎麼不直接省去鱗的動作 直接把皮去掉就好? 皮不能吃嗎
生魚片沒有在吃皮的,然後不去鱗沒辦法做部位區塊切割啊,海魚的鱗片層很硬

They probably still sell the bones because the bones still has some meat stuck on it so people buys them and uses them to make broth etc.

The table should make from other material but wood, because it hard to clean and wood is the good place for micro biology and mold live, i dont think japanese dont know that....

為何旗魚去皮都多切那麼多肉丟掉??
紅色的是血,味道會很噁,所以暗紅色跟黑色的地方會修掉。
不過這位師傅前面影片有些的確也切比較多掉,他到最後修飾起來就很好看,就看老闆或板前長做事的風格,通常,包刮骨頭都會拿去熬湯,不過價格跟生魚片比就是有差。
對了 如果靠近肚子 切多一點掉是因為魚肚有一排刺,所以生魚片或炸魚塊的料理通常會切掉
