      @@eonoire Cry about it, this is a fish. He said that it was respectful to see the fish be handled with such professionalism and care after having been caught. The comparison you made don't apply here, same goes with pigs, cows, chickens, you name it. The important part where respect comes into the picture is when you treat the meat with care and have it come out with quality, so that the death isn't in vain or wasted. He didn't once say that killing is respectful, but the handling of the already dead fish was, I suggest you learn how to read before you start crying and comment like that about something you clearly don't understand.

    The sheer sharpness of that blade and how well it’s keeping its edge when it goes through the bone which you can hear it as it does (bone sounds different when you cut through it rather than break it) this man is an absolute master of his craft. He makes those knives not just cut but glide through flesh like it’s room temperature butter

      not hard but it is tough and flexible which means it’s actually easier to get your knife stuck in it than you think for bigger fish, unlike with bigger land animals where their bones are a lot harder and it’s just more difficult to cut them in general. I’m impressed not by the fact that he’s cutting though the bone but by the fact that a-lot of these are long continuous cuts through multiple bones at their thicker points.

      Extra extra sharp knives like that are easy to use. They slide through what you’re cutting, so there’s very little force exerted on the handle. Low risk of slippage.

    I really had little interest in how tuna were prepared, but this popped into my feed and I decided to watch. I was totally enthralled from start to finish. The skill in cutting the fish was mind blowing. Sure the knife had to be sharp but knowing exactly where to cut and how deep is a skill I'm sure took a long time to learn. As for the tuna fillets at the end, yes please, I would love to try tuna as fresh as that.

Also fishing is way more sustainable than beef, pig etc. meat, as it literally just replicate itself without intervention.       @@Gunshinzero Its easy to learn. Just practice with an old knife using an oil stone until you get the muscle memory to hold 10 or 20 deg. Then proceed to polish the blade with ever finer stones. In a matter of weeks you will get scary sharp edges that only require periodic polishing to keep them that way.
      With little more than a passing glance I can tell all I need to know about a cook or chef from their knives.

      @@obinnaobiekwe4910 The angle of the cutting edge is very important. On a very sharp knife the acute angle at the blade edge may be 20deg, on a more general purpose knife it may be 60deg.
      The aim is to keep that angle constant along the blade.
      Secondly it is necessary to critically maintain the angle every time you work on the edge.
      Tools are available to maintain that angle but they are fiddly. If you are serious about sharpening knives do it freehand. That is where muscle memory comes into it. Eventually with practice, and a few ruined cheap blades, you will automatically hold the correct angle.
      Search the phrase "Scary Sharp" for lots of information. There are many ways to sharpen a knife and over time you will develop your own style.

    The chef is Yokuzuna. He comes from an Samurai clan are descendants of ancient Ninjas living in a tiny island of Okinawa. The bloodline is nearly extinct, which is why he reluctantly decided to film this video to preserve their secret ancestral skills to future generations.

    as a furniture maker/woodworker, this guy sharpening these knives on a Tormec with no angle guide is impressive af. The angle/bevel of these blades is extremely important and to have the muscle memory to freehand that is pretty cool.
    Edit: Clearly I am an unskilled moron and apologize for my insolence. I never meant to offend anyone by thinking something was cool.

      I reckon I know what the second ‘wheel’ was that he was using to sharpen the knifes. It’s an mdf disc with jewellers rouge used as the polishing compound. People on you tube have made thier own versions of these. Blades so sharp they can cut paper like butter. I don’t think it’s a tormec it’s just a bench grinder he’s using.

      Agreed! But you do learn it. I've been a mechanic for over 30 years and I can sharpen drill bits in seconds free hand. Hell, I can do it with a hand held grinder in one hand and the drill bit in the other hand. 30 years of practice really pays off...

      My father is a master craftsman...taught me how to work with tools from the time I could walk, by the time I was in my teens I could sharpen tools freehand on an angle grinder. My favorite tool to sharpen was a drill bit...on construction sites, the guys would all bring their tools to me and watch me do my thing, I swear some of them went out of their way to blunt the damn things just so they could have some entertainment hahaha!

    I’ve worked on commercial salmon fishing boats in Alaska. Grew up sport fishing in Southern California. Cutting up fish efficiently and effectively is not something you learn in a day! EXCELLENT WORK!!

      @@CateFoodTravel since this is not in The US I think I live in the Great Lakes region so a large fishing industry besides shipping stuff the fish cleaning stations have a blender for the stuff that can’t be used for eating normally it grinds the thing into bits then is used for fertilizer for the farms in the country happy you don’t waste anything that’s killed

    This is absolute artistry for anyone who has cleaned a large fish, like a salmon. There is ZERO waste on that Tuna. You can see the ribs that he cut out. Well done sir, I am in awe of your skills. I hope they pay you a handsome wage, your talents deserve it.

    As a commercial fisherman, this was great to watch, and reinforced the need to handle and store our catch respectfully. Even though this beautiful fish was no doubt handled with care, it still had quite a bit of bruised flesh, which would have affected its value considerably.. very impressive knife skills here too.       That bruised meat is because it's more than likely pen raised or purseined. They get beat up.

      @@bido8176 The dark red to nearly black colored flesh is the broken blood vessels. Ie; bruising. A lot of good meat had been ruined. (I still can't take to eating fish raw. ya' gotta cook it.)

      @@onizeonwukeme2200 To keep scales and the dark meat which is called the bloodline from getting on the final product. Basically to avoid cross-contaminating and mixing flavors because the bloodline has an unpleasant taste.

    It really is fascinating how much goes into the food we consume daily without much thought. From actually going out in the ocean and catching these fish, to the whole market and transportation to the breaking it down and getting it ready for us. To finally the consumer who then just cooks and enjoys it.

      Well the Tuna being cut here will never see the inside of my mouth and this type of tuna is rarely part of anyone's daily diet. I is way too expensive for that. Beautiful work but way out of most of the people I know budgets. More power to those that CAN afford it but for the est of us it is like looking into the candy store window with no money in our pockets. Personally Starkist or Bumble Bee is what I eat and occasionally a nice Tuna steak for myself and my wife on the grill. But that is a supermarket steak not a high end fish store steak. Love tuna but know my limits.

    This was a very impressive video the way this guy kept his workstation so clean presses professional I have never tried sushi but with that complete process that he just did makes me think that one day I might if have the opportunity that fish was so clean looking when he got done I would never have thought it would have looked like that if those knives are not that man's personal knives they should be because he damn well knows how to use them very impressive
