- We use four varieties of meat, skirt steak, flank steak, flap steak, and Sierra steak.
We cooked all steaks to a medium rare 130° fahrenheit in the center.
Fajita Seasoning
1 tablespoon chili powder
1 teaspoon paprika
½ teaspoon cumin
½ teaspoon cayenne
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon sea salt
Use the spice mixture, along with 1/3 cup olive oil, 1/2 shot of tequila, juice of 1/2 lemon and lime to marinate the raw fajita meat 6 to 8 hours before cooking.

Thanks for this video. I was looking for info on the Sierra steak as I recently butchered one out of a large chuck roll that I purchased. I was wondering about it's flavor and best way to cook it. I have always used skirt steak for my fajitas or plain Carne Asada Tacos. Skirt has considerably more fat than the others steaks so more flavor. I use orange juice as the tenderizer and just drink the tequila. Saves money and makes me happy
That sounds great. Do whatever you can to tenderize the sierra, it is a far cry from skirt steak! It is doable, but put it this way, I haven’t had one since this video.
Great video. Many videos breaking down the chuck roll mention the sierra is similar to a flank, but your video is one of the few that actually do a side by side comparison. At $3.50/lb for the chuck roll, it's hard to cough up $14.99/lb for a flank steak.

@@steakwolf Thanks so much! I went to Publix today. They had some beautiful Outside Skirt Steak. But! It was $26 per pound. Yikes! So, I went home with a very nice 3 lb. Flank Steak for $16. Lolol Thanks again, buddy!
