Nice explanation about the skirt steak grain, I have been cutting it wrong my whole life! Skirt steak is such a good cut I've never had a problem cutting with the grain I can only imagine how much better its going to be after cutting against it!
Same! Except I noticed it was tough to chew. Now I know why lol.
For fajitas, I stick with flank steak, because skirt steak just has too much connective tissue (stringy fat).
I need that flank steak roast! 😳
