Outside Skirts Steak vs Inside Skirt Steak - What's the difference?

  • I am a huge fan of skirt steak. The texture is excellent and the flavor can be off the charts. But did you know there are two different kinds of skirt steak? Inside skirt and outside skirt.

    This was the first time I tried these two different cuts of skirt steak side by side. Overall I was very impressed by both but the outside skirt was just a bit more tender and a bit more flavorful. If you can find outside skirt definitely pick some up and give it a try.
    I marinated these skirts in some Bachan's Japanese BBQ sauce and then made them into some bulgogi type tacos. Carne Asada is another great application for these steaks and you wouldn't be wrong to just season them, cook them, and eat them without doing anything else.

    Thank you for the side by side comparison of the inside & outside skirt steaks. There are lots of videos of people cooking outside skirt but not much of the inside. I have never eaten skirt steak but bought some yesterday from a supermarket in the UK. I am assuming that it will be inside skirt but the packaging doesn't say. I didn't even know that there where different types of skirt before today.
    The cooking directions on the packaging advise first searing then covering with liquid and cooking in the oven for 3 hours. I'm not going to do that! I am going to give them a bit of a tenderising with a mallet then knock together a marinade and let them soak for a few hours before cooking as you have over a hot grill on my kamado. I'll then rest them and slice against the grain before serving to my family. Hopefully they won't find it too tough.

    If inside skirt steak is what you get at the grocery all I can say it was tender and had good flavor.

      I would eat either any day of the week. Skirt has become one of my favorite cuts over the past couple years. Very versatile, super flavorful, and easy to cook.

    Crazy, i never knew tortillas, cabbage and cucumbers were carnivore.

    Its a waste make tacos from outside skirt steak. That should be eating medium rare steak on the plate with your side of vegetables or potatoes
