I call fried rice my "fridge cleaner" and it's rarely the same but always delicious. It's also one of the best things to learn when learning to cook because it teaches you so many individual techniques... cooking rice, frying eggs, chopping and prepping (mise en place), heat control etc, etc...

the real secret here is the real fried rice. fukushima momo is the goddess of green sauces. I am so proud to have cooked Mr. Chang's toupeé. We cannot survive in this world without that direct divine support from Fukuyuama Momo toto Noodles. Everyone needs these noodles. I would eat my neighbour to get to those momo soy packs.
Free Chinese leftover fried rice recipe: Take a pile of Chinese leftovers. Try to get some white rice like a person of culture. Stir fry, or as close as you can get. This is how fried rice is supposed to be done to begin with. Once you know the basics you can use almost any combination of foods. So let's say you've got yesterday's white rice, some sesame chicken with broccoli for no reason, and some egg roll. Cut everything into bite size pieces. Put some oil in a your biggest nonstick and get it hot. Fry your rice, and add a little oil at a time to keep it sizzling until it gets some brown and crunch. Add the sauce from the chicken, maybe some soy sauce packets or whatever you have as necessary, keep working it with with the rice until it's evenly brown from sauce, rice will rehydrate and get delicious. Add the meat until it's warm. Sauce should be cooking down and thickening. Then veggies and egg roll innards until warm. If it's too wet, keep cooking until sauce thickens a bit as the rice absorbs it. If it's too dry and sticking, use sauce packets or dumpling sauce or a bottle of soy sauce, whatever you have. Once everything is warm and sauce is mostly absorbed, remove from heat and serve. Guaranteed delicious. Bonus points: a dash of sesame oil at the end makes everything smoky and shiny. Diced green onion is a lovely decoration, and any onion diced with the rice is great. Chili crisp is almost cheating as a flavor boost Also works for Indian or Pakistani (think jasmine rice, curry, samosas). Easily works for lo mein in place of rice. Thai food usually works. Etc.
actually let's be real. The last chicken video was awful too, the sets awful, the camera music and editing are awful. When you hock 20$ chili crisp and ramen that's 10x more than the same brand in the store you'd think you might have the cash to hire a production team that didn't just throw ramen over martini glasses. love Dave and his restaurants are amazing but this ain't it.

I agree. A bit too slow. Perhaps that is just their style. I miss the fieriness from chefs like Matty Matheson or Action Bronson and their production teams. Still, it’s so worth checking out. You learn a thing or two👌🏾

David on the other hand is still charismatic but falls more towards him being knowledgeable and reputable in the kitchen so his videos are interesting because we want to know what a pro would do. You’re right about this video being slow. David and his editors need to reduce the dead points where it’s just him quietly peeling shrimp or stirring. He can have his ingredients prepped and ready which can help a lot with that.
So, after all the fried rice content I’ve been watching lately, this reminds me that no dish needs to be made in a certain way. Every other fried rice video is prepared essentially the same order and same preparation. Ingredients can be cooked in different orders. Preparation can be changed. It’s all just food at the end of the day and how you like it.

Doesn’t matter where you cook fried rice, the only same thing is no clumpy rice after cooking. He couldn’t say it’s tasting after testing from the wok.
i recommend you use a silicone spatula for home cooking on the wok. takes a while to get used to it because you dont see it that often, but once you get used to it, you will get the benefit of cleaning the sides with the silicone spatula. instead of tossing, shake the pan back and forth and push food away from you with the spatula. because it's a wok, the food will slide back down. i find it's a lot easier to stir food this way compared to shaking food all over the place like david is doing. and it doesn't appear uniform and even either. this also keeps the pan close to the fire. tossing the food with barely the help of the wooden spoon forces him to lift the wok, wasting heat.
Just watched Uncle Roger's review on this vid. Got motion sickness from horrible camera movement. Also, not enough cooking shots and pan work. Bad angle shots of prepping ingredients. I generally like David but he does seems to be getting big headed. His show on NtFlix, opening and interaction with some o his guest seem awkward. Thank God for fast forward.
