    I lost my mother to cancer right after her 56 birthday. Way too young. I wish I got to do fun cooking things with her. It's sweet to see ya'll cook together. Enjoy it!

    Just made mine! Used an Oster blender and a mason jar to make the walnut butter, used regular whole wheat flour as I'm out of white whole wheat flour, and needed 1/3 cup more non-dairy milk as I live in a dry climate. I blended everything together with a spoon in a bowl. Don't let not having a food processor keep you from trying this recipe!

    Powder “puffs” and soda “spreads”. That’s how you can remember which ratio of baking powder it is to baking soda. If you want your final product to rise the most and be fluffy, use more baking powder. But don’t forget that you have to add an acid like lemon juice or vinegar to baking soda for it to work well. Baking powder usually has an acid already added in.

    I just whipped up a batch and am waiting for the oven to finish pre-heating! I used 2 c. oat flour, 1 T. baking powder, 1/2 t. baking soda, didn't measure the walnut "butter" or soy milk. The dough tastes delicious and even buttery--I wouldn't have thought of walnut butter, but I'll use it in baking from now on!

      @@Finbarbird yes, I just ground up "old fashioned" oats in the food processor. The texture was a bit crumbly, and dry, as I didn't add enough soy milk, but still tasty.
      I suspect store-bought oat flour is finer.

    Since there is no acid in this recipe, sorry acid queen, the baking soda is redundant. The baking powder will do all the leavening with just the oat milk. If however, you add a splash of citrus juice or vinegar to the milk, to make a plant based buttermilk, the baking soda will react.

      I added apple sauce ( unsweetned) for the acidic touch. It worked wonders to the taste and the texture as well.

      Just came here to say the same thing. Baking powder is activated by heat - baking soda is activated by acid. No need for baking soda without any acid.

    I grew up making conventional biscuits from scratch the way my mom's mom taught her (Mom was born in '46). So I get the "nuances" you're trying to describe. The mixing of the walnuts into the dry mix is equivalent to "cutting in" of the lard into the flour (done with a fork). After that it's just adding liquid to make the right consistency and shaping/baking. It was my impression that baking powder would not work at all without a bit of salt and I never used baking soda in any amount, except when out of baking powder. Since changing my diet almost 5 years ago to WFPB, oatmeal and flaxseed meal go into ALL my breads now: yeast, sourdough, or quick breads. Thanks.
    Also, I eat dry/raw oatmeal and fruit plus flaxseed, greens, and spices EVERY morning now since I watched that one. I usually have four fruits, but sometimes five--the fifth being cranberries of late! It's always changing. Also the cranberry salsa was a hit at Thanksgiving! Thanks so much for making these videos.

      Also, I never use store-made fruit spreads now, it's just too easy to cut up strawberries, add a little bit of water and cook them down over low heat in a pan- "melting them" I like to call it. Strawberries get so much sweeter when heated, and the water mixes with them to make a fresh, zero-added-sweetener jam. Conventional cooking calls this a "compote" but always adds tons of sugar. The sugar simply is not necessary.

      @@wadepatton2433 In the morning, i put 1/4 of a cup of frozen berries, ( more often raspberries) any kind works, and i add a table spoon of water and hop in the microwave for a minute in a small bowl. Then, i add 1 tea spoon of chia seeds and let it rest a minute. It gives a fantastic jam texture, no sugar or sweetner at all. Then , spread it. It's wonderful.

      @@thatcanadiangrandma Thanks, the slow method I use isn't good for all fruits, so I'll likely try that. Also, in case you didn't know, a recent study shows that we get much more benefit from ground chia seeds than whole. I now grind mine in a mortar and pestle.

      yes, some baked goods do need salt to work well (I've heard)--but most of the time I think the amount can be decreased (even though chemistry is involved)

    Made similar ones with cashews instead, blending them in with the liquid rather, and pouring over the dry ing., carefully folding the dough several times on a work surface. (Minimal handling.) Worked great for strawberry shortcake! Also added vinegar to the liquid to give tangy flavor and activate with soda for more rise. They were great, as are you ladies and your plant- strong message. Thanks!

      One of my favorite scone recipes includes rosemary and lemon zest. I'll have to try adding those to this recipe!
      Scones are often a bit sweeter and butterier than biscuits in the U.S. We add a little sugar and/or fruit or chocolate to our scones.

    Four years ago before I were vegan, local restaurants and grocery stores did not supply much plant-based options but today is the complete opposite. Plant-based foods are in high demand and are bring supplied by many companies. It is very important to go vegan in today's world (for the environment). Humans are able to be strong, healthy and thrive on a animal protein free diet. Not to mention my workouts, sleep, health and also recovery after training are awesome on this amazing diet. Much love all my fellow vegan TH-camrs and influencers. Happy 2020 everyone :-).

    Just made a batch & while I was very skeptical as to how they would taste, they are amazing! At 11 minutes I really felt they would be too doughy in the centre so, I left them in for 3 more minutes. I think the walnut butter is ingenious!

    I have made this recipe twice since I saw this video in January. I LOVE THEM! I make them with soup and put a spoonful of fruit sweetened jam on them. They are so delicious and filling and satisfying. Oh, and I make this soup/biscuit combo to enjoy with my wfpb mom. Big love for you two.

    Brilliant!! The one thing I'd do differently is make actual buttermilk by adding cider vinegar to the plant milk to curdle it! But - trying this PRONTO

      I do it with 1/2 cup of avocado+ 2 table spoon of apple sauce ( unsweetned) , and it works wonders . The trick is really to pulse a few times, no over working the dough.

These guys are the reason my rheumatoid arthritis pains disappeared after 20 years of needless chronic suffering. I still get emotional when I hear people talk about their success stories.     How timely the past couple of days I had been wondering about making biscuits vegan and low sodium. I'm definitely looking forward to trying this! Thank you. I'll probably you sodium free baking powder and add lemon juice and vinegar. I'll try to remember to let you know how it turns out for me

    Finally ordered the two books. I feel so much better when I don't eat animal protein. I'm hopeful that switching to plant based will improve blood sugar issues for me and my husband.

    Before the plant based diet when you aint got no butter milk, you add lemon juice (Annes fav) to the milk so it curdles a bit. 1 TBSP per CUP

      Yep, soy milk in particular curdles great with lemon juice or vinegar, and helps with the rise.

      Yes. I would do this all the time because I never had buttermilk on hand when I decide to use a recipe that called for it.
