If you flip the jar over on its lid while it's hot filled and sealed it adds extra seal tightness. You will actually hear that pop sound when you eventually open it !
@@JaucheSan I think it's good because the bacteria would need to go from the hot lid at the bottom, to the top where there is no jam, in order to make the food go bad. But because it is so hot, it makes it really difficult, and the jam will last a lot longer because of this (I think, I'm not 100% sure, though)

Rather than a Dutch oven or stock pot, try a slow cooker to break down the fruit. It will avoid scorching and save energy from having to bring a pot of fruit to temp, letting it cool then reheating it. TH-cam already has videos on how to do this.
I preserve all the time, once the jam is at simmering point and jars are hot and out of oven at time of filling, once lids on they should seal and be fine, if your jars are cooler and the Jam is too, then you can use that method for additional assurance to preserve. I have a pot stand/base that fits in a large pot. I place and cover the jars with water, bring to a boil for half hour and remove and leave to cool, then I hear all the pops, my preserves have lasted 2 yrs, prob more as we use them up before then, hope it works out, have never made this sugar free method and look forward to trying it on some blackberries now. it also ensures that any bacteria in the air gap come into direct contact with the very hot jam

That's how I learned it. But now turning the jars upside down is considered a big no-no. Still not sure why
