@@winterfoxx3181 this recipe would NOT work for water bath canning because of the lack of sugar. The xx cups of sugar in canned jelly and jam recipes is what makes it safe for canning.
There is low methoxl pectin for use in water bath canning with stevia or artificial sweeteners. I found it recently when researching low carb fruit spreads.
I made some blackberry jam with freshly squeezed orange juice (I forgot to get lemons) last week, and the orange flavor went really well with the blackberries. I just made some mixed berry jam (about half strawberries, with the rest being blueberries, blackberries, and raspberries) using lime juice (again, didn't have lemons), and I'm hoping that it goes just as well.
This is the lowest in sugar I've seen a jam recipe! I am so happy I stumbled across it as someone who has sugar sensitivities! Can't wait for late spring-summer to make these jams with fresh fruit! Now peach picking will definitely be on my to-do list this summer 😁

I saw yesterday that freezing these jams is great, just need to take them out a few hours before using them, so now you can preserve all your seasonal fruits and keep them fresh in the freezer.

I've got teenage boys. I make HUGE batches. Let it completely cool in the pan. Put it in used, plastic peanut butter jars, half inch head and freeze. I keep two in the fridge. When we get down to half a jar, just pull one out of the freezer. PB&J never gets old in my house. ;-)
Concord Grape Jam pls. Was told to look into Chia seed so I can do w/o pectin and sugar. Nice video! I have always had an issue w/my jam's being to runny. So I end up with Concord thick syrup instead. But, I filter out the skins and seeds of the grapes.

To anyone looking to make “jam” without cooking, try using a pinch of Xanthan Gum (found in baking aisle). Purée fruit of choice, add sweetener if desired, then a little Xanthan gum and blend. Xanthan is a commercial ingredient used as a quick thickener, and is supposedly safe to consume in moderation with other daily food choices likely also containing XG in mind. It’s the equivalent of adding Wondra flour to thicken a gravy. What you should end up with is a thick spread that won’t have the “jelly” ness of jam, but the viscosity and flavor of raw fruit
That's a great question1 I believe chia seeds are best suited for this and I'm not sure exactly how flax seeds would turn out, though they do thicken with water. Sorry, can't say for sure.
Chia seeds, do they soften enough that they aren’t noticeable? I have a very picky person that would balk at seeds he sees, I have frozen blueberries that would camouflage the seeds. Also, could you seal the jars in water bath? I have lots of blueberries and chia seeds and honey. Usually 10 minutes to seal the jars.

2 weeks in the refrigerator, one year in the freezer. If you greeze in glass jars, leave more head space, anout 3 cm.

I freeze it but since it’s so fast and easy to make I don’t make big batches at a time. I will freeze the fruit if I have a lot and make it as needed.
