Start with the base game of catan. It's pretty simple if you just start playing and reference the book when needed. When you get bored of the base game, look into an expansion.
Traders part 1 is a good expansion but Traders part 2 is where they lose me with overcomplicating it. xD I mean, two different kinds of knights? Really catan, you couldn't have figured out a way to use one consistently?

The barbarian attack is just like cities and knights but weirdly more complicated

Traders and Barbarians gets you the most bang for your buck. It's basically 5 expansions in one, plus some small variant components.
