"My pizza is inspired by the nostalgia I feel with pizza culture and travel. I went to as many pizza places, old and new as I could across Manhattan and Brooklyn. I talked to the legendary owners and pizza makers and examined their beautiful ovens, coal fired and gas. I came back with burning desire to build my own oven in my back garden and put my own stamp on the iconic New York pizza."

Yo tambien tengo una pequeña pizzeria y justamente empece mi investigación compre el libro de Badias. Mi mantra desde el dia 1 a sido siempre aprender y nunca estar satisfecho. Pizza looks great but don’t understand why he thinks this is a new style, he’s just doing nyc / nj style. Even mentions Joe Beddia from Philly. Beddia was doing it differently from everyone and even he didn’t claim he was starting a new style.
agreed it looks like a neapolitan fermentation/ hydration but NY style all the way through
He explains why he thinks it is „new“ it’s just because small changes in recipes and different sourced ingredients, in the end it’s all pizza..
I think maybe he’s influencing other people in London to make a similar style and that’s new to London. Not making a new style of pizza in general. Also didn’t think he was making some kind of arrogant claim.
Gotta remember people love words, categories and styles.
Typically higher hydration and faster bake than NY style - so you end up with crisper crust and chewier interior. London style is like a hybrid of NY and NH.
