Hearing Tom talk about the dough, how he started out, the cook, just fuels my current pizza making obsession. Very inspiring story. I now have to go and check out his pizza shop 😊
So refreshing to hear someone with this level of passion on yeast and dough and stuff. The best Mozerella in London is from The Ham and Cheese Company in Bermondsey. My affluent Roman friend said it was the best he has had and he has access to really amazing places in Roma. Sally's in New Haven was THE best pizza experience of my life so far! Also my old bakers in Great Waltham had a huge coal oven which made amazing bread as the brett; funk and ash stuck together and made it darker and slightly burnt but the flavours were enhanced and it really went so well wtih the plain tomato base! Bellisimo! I hope to visit. Excellent work!
I've just discovered this rabbit hole.. holey moley that lill bit of advice has changed my game completely. If the dough doesn't wanna play, walk away and come back.
this pizza looks very beautiful, and the shop very pleasant. I didn't come away with a clear understanding of what makes this "london-style" pizza, but that's alright. It's good to do things well, better than they need to be done.
Can't wait to get my hands on the Arc XL. The set including the stand and the hood has already been pre-ordered, hopefully I can look forward to it in October.
I've got 3 pizzas on my bucket list: Vincenzo's, Peddling Pizza and Best Pizza. Tom, Adam and Frank seems like such cool dudes and make their own style of pizza, which would be awesome to experience.
London "Geezer" pizza. As a pizza hobbyist, even built an oven in lock down - you always want to find down to earth guys who do great pizza that's done as pizza without the pretence. David Portnoy of one bite rules talks about pizza worth the travel. In the past I travelled to find a guy called Pizza Massimo in London who does great traditional pizza from a street stall and who's videos helped me along the road to home pizza. Will now be adding Vincenzos no nonsense approach to my take on pizza and another bucket list visit to London - looks like 1hr from Kings Cross which is about another hour from home....My only question - have done Sicilian (Grandma) style but the base always reminds me of fried bread or is that how it should be.... Great looking pizza as it should be...
He belongs to a Guy Ritchie film. I mean it in a very good way. He would be that guy loved by everyone in the film. I think he is loved by everyone in his actual neighborhood.
looks amazing. i don't know why british food gets such a stupid reputation in the US. I love meat pies personally. and a well made fish and chips. 2 of my favorite meals. now i learn there's london style pizza that looks better than new york style pizza. wtf. people are just haters.
I think you can tell he was struggling to be enthusiastic about the Gozney oven 😂 It clearly didn’t cook to his standards. But good on him for playing the game. I’d definitely eat at his restaurant but pass on the oven.
nothing like seeing that oven spring at home on a high hydration dough even with sauce on the bottom. It's all about the dough first and then the toppings fall into place.
@@RobMLyon Making a admittedly well made video about the dubious concept of "London Pizza" then choosing a venue flogging it in Hertfordshire is wild! But you know... Ok then!
From a Londoner, believe me, there is no such thing as "London style-pizza". The people are the ones who name and praise food, not the restaurants owners with their bad marketing skills.

Awesome old style fitout, such warmth and character.
"Light as a feva" I love it. That place, the pizza, and Tom look so excellent. Man, I'd love to visit one day.

Hey did anyone get the name of the pizza chef and book that Vincent mentions at 4:10 that was the inspiration for his dough? Thanks ahead of time.

He’s defo cultivated a nice vibe around him and his pizzas but “London style pizza” give off!
