I'm extremely happy to see chefs take pride and put heart and soul into the best ingredients they use to feed their people! There's a small movement in the US to reintroduce heirloom grains back into our communities. Great video. I'd love to see more!
Jesper actually gets up 03.00 AM a couple of days a week right now. He does that to be able to spend time with his daughter and support his wife who is still studying. Very inspiring.

I have watched that segment of the video 50+ times during the editing process and I laughed every time he said that line. :D Jesper has spent 20 years of his life working with food and hospitality. He makes it looks so easy but it definitely takes a lot of hard work and sacrifices to get up at 03.00-04.00 AM and bake the bread. I think it is fair to charge whatever he is charging for the bread.

I was studying abroad in Copenhagen earlier this year and hands down, the best bmo I had was at Lille bakery and now I know why haha. Wish I got the opportunity to check out this place as well.

I totally agree. I think this is the way to go. Eat high quality food without chemicals and sugar. Jespers sourdough bread is definitely more healthy than all the processed bread in the supermarket.

Denmark is amazing. I can highly recommend going here. Make sure you visit some time between May and September. It gets cold and dark in the winter here. :-)

fascinating video, all that manual work required a lot of education from other bakers and chefs, I bet. This guy is on an admirable mission that is about more than just making as much money as possible. 18dkk = $2.70 US. In the US this would be considered an "artisanal" product and therefore people think they need to pay more. The bakeries around here (Madison, Wisconsin) would charge US $4.50 = 30 dkk for these types of bakery items. The Danish people should not complain.

The bakery is very busy and most Danish people understand that high quality products like this costs more than the processed stuff you can buy at the supermarket. It is very few people who complain. Very interesting information about the prices in US. I did not know that.

I don’t eat the cakes anymore because I eat 5 in one sitting and can’t control myself . That’s 50 euro worth of cakes 🎂 hahaha 🤣

The toast was for me and I ate it. I tasted absolutely amazing. I agree with you that it was a bit on the dark side but you could not taste that at all. Fantastic dish.
It was great and inspiring, but I think that a perfectionist is a perfectionist in everything, so if you make good buns, it is worth learning to make not only tasty, but also good coffee, so latte art will help you.

Denmark is amazing. I can highly recommend going here. Make sure you visit some time between May and September. It gets cold and dark in the winter here. :-)

fascinating video, all that manual work required a lot of education from other bakers and chefs, I bet. This guy is on an admirable mission that is about more than just making as much money as possible. 18dkk = $2.70 US. In the US this would be considered an "artisanal" product and therefore people think they need to pay more. The bakeries around here (Madison, Wisconsin) would charge US $4.50 = 30 dkk for these types of bakery items. The Danish people should not complain.

Just to make it clear. The bakery is very busy and most Danish people understand that high quality products like this costs more than the processed stuff you can buy at the supermarket. It is very few people who complain.

Thanks for introducing me to this wholesome bakery . I have never been to Denmark but will try to visit sometime! I work at speciality cake shop in Prague and also made deal with myself . I don’t eat the cakes anymore because I eat 5 in one sitting and can’t control myself . That’s 50 euro worth of cakes 🎂 hahaha 🤣
