I have every episode of The Pizza Show on my DVR and I watch it about once a year and share it with friends who look at me funny when I start yapping on about pizza. I WAS A RESTAURANT CONSULTANT for over 20 years. Grew up with my father, who was a chef. Ran restaurants all through college. Entered consulting after that. Al really hits it right on the nail. When I ran pizza shops for clients, I would tell them, "Anyone can hire a pizza man. Who you need to hire is a baker". Every time I took over a new pizza shop, we would restructure and put an ad for a baker, not a pizza man. Always worked out well. Its the difference between an master auto mechanic and an engineer. The mechanic still knows a lot and can fix cars but the engineer understands how the car got there in the manufacturing process. The baker knows the recipe and knows how to tweak it and gives what they bake a lot of love and attention, with an goal of perfection. The pizza man just knows how to form and make pizza and maybe a few other things. That is what makes Al special. Not only is he a baker but he has been taught by many generations of bakers that came before him.
The Char, The Air bubbles are MONEYYYYYYYY! SO GOOD n just adds to the great ingredients! My Daughters and Family LOVE PIZZA 🍕 it's part of who we are and I love It ! There's nothing like A GREAT pizza. One day I'm taking my daughters to the East coast to try New York New Jersey and Connecticut. The pizza cooking in the pizza oven in beginning of Video looks spectacular!
