    When i say ive watched over 50+ jerk chicken videosz even from the best grillers down in Jamaica, this simple video is BY FAR the best. The way he boils the marinade and re uses it, it genius. Great Job Sir

    Have you tried soaking those pimento seed in water first? That way they steam and fragrant the chicken before they burn.

    That chicken looks wonderful! I can’t wait to make it myself. If I could make one suggestion? You should try lump wood charcoal instead of charcoal briquettes I think you’ll find it add a little more flavour. Thank you for the video.

    great video. I like your technique with the boiled off marinade. I do the same but usually brush it on. I will try your method next time.

      Just dipping it just gets more sauce on it but you can brush it on

    Great recipe! I recently started BBQing. How much time in did you start basting with sauce? And how much between bastings?

      I left it in the marinade over night and each time I flipped the chicken I dipped it in the sauce, about 15 mins in between

    OMG!
    The color and moisture on that chicken is amazing! I know it's not one time did your fire flare up I am not good with grilling and for some reason every time I grill the fire always flares up and scorches the chicken please tell me about your fire management technique

      I burn the charcoal fire and let the fire die down. This way you get more of the smokey flavour into the chicken and its not so hot putting the chicken on. If you put the meat on a high heat grill your going to get it to stick to the grill.

    I would score the meat before marinating, and skin side down first on the grill to maximize crisp first, but it’s still looking good🍻

      If the grill is at 350 degrees it will just rip the skin off. Jerk chicken isn't crispy.

      1 3/4 hours depending on how much heat the charcoal produces

    Chef I am going to try this recipe but i am going to use an electric smoker for one batch and charcoal on another and see if there is a difference in taste. i noticed you didnt use lighter fluid or at least not in the video lol.

      Not but you can if the heat dies out. You dont want to much heat you want the smoke to cook it. It took abouy 45 mins to cook the chicken

    I've never seen any do this method of dipping the chicken in the source once its on the fire. 😮
    I bet it was lovely. 👍🏾
    The only thing that would have made it better was to make a jerk cut into the chicken before the marinating.

    You can always just double the sauce and separate half. No need to keep all that blood and juice from the chicken when it was breaking down. Great video, I will definitely try this recipe!

      The sauce is boiled down after the raw chicken is it. It's not like there is blood pouring out from the chicken. But thanks for the comment.
