Can you haters in the comments please take your attitude elsewhere, it's so annoying when people argue that a recipe isn't "authentic" because it's not made exactly the way you grew up. As a Jamaican-American who 1) lives in an apartment building that doesn't allow charcoal grills, 2) has American friends who can't tolerate scotch bonnet pepper and 3) would have to pay $40 to ship pimento wood chips to the US for a dish I make once per year-- this recipe is perfect. Theres some jerk chicken recipes on youtube that take 3+ days of brining, 12 hours of slow smoking plus 28379842 different ingredients, it's absolutely insane and most of us don't have the time or resources to put that much energy into 1 dish. He's made it clear in the comments and video that he makes recipes that the average person can easily do, those people are his target audience.

For anyone asking about the dip: It’s the exact same marinade he used for the chicken. He placed the marinade on the stove to boil because it had raw chicken in it but once he boiled it that brought the temp past 165°F which is recommended for finished chicken.

Hello Chef Henry. This is my first time on your channel. I've watched quite a few jerk chicken videos and all have added scotch bonnet pepper to them. I like a little spice but sometimes that scotch bonnet is too much for me. Thank you for thinking of us who can't handle alot of spice and made a jerk seasoning without it. @@chefhenrykitchen with all due respect, it's a cultural thing. People eat much worse things than what you cut off that chicken thigh and leg. Any google search will say that rinsing and cleaning any meat is entirely unnecessary for any real reason other than it makes you feel better. Also vinegar itself does not disinfect a sink unless you were to somehow submerge the entire sink for several minutes, the microscopic spray absolutely everywhere in your kitchen from washing with the tap is the main issue. Obviously small enough that it's unlikely anyone would ever be bothered by it but that doesn't mean it's not happening. In a commercial kitchen nothing like this ever happens.
Not just a cultural thing. If you haven't cleaned chicken before I ask that you try it just 1 time and watch the stuff that comes off of it. It's just a cleaner taste.
This stuff looking super tasty. If I ever made this, I'd have to make a smaller batch of chicken since most of my family can't handle spice. It'd probably only be me and my dad eating it lol

There is no difference, you can taste the seasoning. The charcoal gives it a smokey flavour but you can also achieve that with artificial smoke flavour
