My Jamaican friends made me the same steel drum BBQ here in Vancouver. Telling you there's nothing like makin jerk on it low and slow like this guy on the vid. We stand around it drinking cold beer and eating the fresh veggies from my garden with the jerk chicken/pork. Neighbors be dyin for a piece! Great vid bredgren ✊

Living in the cold I can only do oven jerk due to the snow and it can't compare to the real jerk in Jamaica every time I go home I look forward to the jerk and the basically the food Nothing compares

I brine a whole chicken overnight, then make a wet rub with scallion, fresh thyme, scotch bonnet, ground allspice, black pepper and a few other spices and let it sit in it overnight (two overnights). I can't get pimento wood to cook it over, unfortunately so I just use pecan or hickory.
Nutmeg and cinnamon fine it's all about ratio/balance. Anyway people no argument here Andrew never gave the recipe for his jerk so no one knows if he add or didn't add N+C

Full pig roast is I'd rather have it separated and cooked in sections don't like the pulled style.
