Paul, so many recipes call for salt to be added at the same time as the yeast. Manysay salt inhibits the yeast development. Have you any thoughts to share on this point?
@@dragonwitch27 the ap flour that I use is all hard wheat with high protein. If looking at national brands such as Robin Hood, that's a blend of hard wheat and soft wheat. Basically you want to be aware of the flour you are buying.
The point is to get to a certain gluten percentage in the flour. Most brands will have that percentage on the bag. You might be able to tell by comparing the nutrition labels as well. This recipe needs a higher gluten content or the dough won't stretch enough to work properly.
I made these and pushed a single chocolate chip down into the top of each raspberry before wrapping them in the dough. They were delicious!

Could be made sugar free with powdered stevia or other. Nice recipe.
Cinnamon is nice to add to the sugar coating.

In Canada, our all purpose is good.
