Good work- leaving it a week is a great choice, and the colder you can get it the better, so if you've got a pantry or somewhere with a nice cold floor or room in a bottle fridge you'll really notice the difference.
What you call filtering is usually called 'racking' where you syphon it off the sediment. With traditional country wines you'd do it a few times over the months of brewing, but with kits, and things like finings you don't need to do it as all you're doing is wasting the wine that doesn't get transferred over - getting it degassed, as cold as you can, and finings if you need them is all you need. Same with beer, but you don't try and knock out the gas. Time and temperature are great things for clearing with wine.
Man, I could do with a drop of that right now with a bit of something on the side. It is bloody piping hot here and I got twatted in the eye with a swingball and I'm not in the best mood.
Man, can't wait to see you sample that - I can imagine it being like a burgundy. Cheers, dude.

When did you top up the demijohn to the neck before you added the cherry flovour... Seemed to skip and it was nearly full... Love the videos.. We are at the leave for 7 days now and any advice would be appreciated... I've followed your instructions to the letter so far lol

Eventually got a “Sweer Newkie Brown” kit. How much sugar did you put into the bottles to get a nice carbonation. I’ve been getting too much pressure in my brews lately. Smashed Kilner bottle and torn apart 2 litre bottle. Not ready to bottle it yet starting it Monday 9th. Gave my last Northumbrian to my brother in law today. Got to make do with John Smith’s and Murphy’s for now.

Great kit that one mate, I use two carbonation drops per bottle or two level tea spoons of normal sugar and both methods seem to work very well for me and never had a bottle break or top pop off, good luck and let me know how you get on with it..
