    This dal is specially made for Gujarati Wedding (Lagan) - any Gujarati wedding feast is incomplete without the traditional Vara ni Dal, or Toor Dal. For such grand occasions, the dal is boiled over and over again to get the best flavour. I learned the tricks during my niece's wedding.

    its so nice seeing lots of gujurati recipes, as a woman starting to learn her mums roots a bit late in life. nothing wrong with any other style of asian cooking but everyone always loves their mums style the best!

    This looks delicious! I have to try it. I have a tip someone taught me... Instead of using a spoon to push the food through the strainer use a ladle, it works so much faster!

    Hello bhavana, you have gaven an good information regarding vara ni dal, i am from charotar region at which particular this vara ni dal is very famous specially in weddings, but still i need to suggest some proper information to still increase your flavour...we have research from many maharajs, local rasoya..

      Points to be considered
      1) the actually quantity of what amount (salt,jaggery and sourness source) with an appropriate quantity is very important...to enhance an taste typically called vara ni dal is very important.
      Generally
      100g raw dal requires
      50g jaggery
      3-4g tamarind (others like lemon and kokam you can) but for best taste use tamaring only
      Salt:10g according to 100g dal
      2)Tomato is generally not majorally use in traditional dal...bcoz it increases an sourness level bcoz we were already using tamarind for that purpose
      3)For whole spices
      You have to also use (1piece staranise, 2 small 1-inch cinnamum,4-5cloves,2 medium bayleaves,2 whole red chilles)
      Rai,methi,hing what ever you were using in that video is great..
      Ginger,peanuts and suran is same as you shown in video
      4)For Spices powder
      Kashmiri red chilli-2g
      Turmeric-2g
      Shakti Gujarati dal veg masala: 6g (very important)
      Coriander-cumin powder:4g
      5)if you were using an dry dates then cut off some jaggery portion
      Like 40g jaggery and 10g dates
      Important points to keep
      1)proper amount of salt,jaggery,dates and tamarind..
      2)garam masala you were using
      Prefer shakti gujarati dal veg masala.
      3)The tadka of hing and spices
      4)the key point (more u boil better you get an taste)
      It is said traditionally an dal for wedding is to be boiled for an whole night in traditonal utensils called as limbodi...
      From that only it is said vara ni dal or limbodi ni dal
      Hope this can help you out better...

      Kokum is different than tamarind but tamarind can be used instead of kokum. kokum, is a fruit-bearing tree that has culinary, pharmaceutical, and industrial uses.
