    DHABA STYLE DAL FRY
    Preparation Time: 10 minutes
    Cooking Time: 20-25 minutes
    Serves: 2
    Ingredients
    For Dal
    2 tbsp ghee
    ½ cup tuvar dal, soaked
    3 tbsp moong dal, soaked
    1 inch ginger, sliced
    Salt to taste
    ¼ tsp turmeric powder
    1 tsp red chilli powder
    1 green chilli
    1 ½ cups water
    For Tempering
    1 tbsp ghee
    1 tbsp oil
    ½ tsp cumin seeds
    1 inch ginger, finely chopped
    ½ tbsp garlic, finely chopped
    1 medium onion, finely chopped
    1 tsp red chilli powder
    ¼ tsp turmeric powder
    Salt to taste
    For 2nd Tempering
    2 tbsp ghee
    2 tbsp oil
    3-4 garlic cloves, sliced
    2-3 whole dry kashmiri red chillies
    A pinch of asafoetida
    ½ tsp kashmiri red chilli powder
    Coriander leaves, for garnish
    Process:-
    ● Heat ghee in a pressure cooker, add tuvar dal and moong dal to the pressure cooker
    and roast for 2-3 minutes.
    ● Add in ginger, salt, turmeric powder, red chilli powder, salt and green chilli. Mix well.
    ● Add water, cover and allow to cook for 3 whistles.
    ● Meanwhile, heat ghee in a pan, add cumin seeds, ginger and garlic, saute till
    fragrant.
    ● Add onions and saute till translucent. Add chilli powder, turmeric powder and salt,
    mix well. Cook for 2-3 minutes, till the rawness of the spices is gone.
    ● Add the boiled dal to this tempering and allow to cook for simmer for 3-4 minutes
    ● Meanwhile, prepare the second tempering.
    ● Heat ghee in a pan, add some water. Add garlic cloves, whole dry kashmiri red
    chillies, asafoetida, kashmiri red chilli powder and mix well.
    ● Cook till it splutters.
    ● Pour the prepared dal into a serving dish, garnish with coriander leaves.
    ● Pour the prepared tempering and serve hot.

    Cooker ka ek simple theory hai,
    Close the lid when the water is boiling.
    Tej anch me ek siti, then kam anch me 2 siti(if dalmis not soaked)
    If soaked then tej anch me ek siti, kam anch me 1 siti.
    Let the pressure release on its own.
    Use the bigget burner in the gas.
    Also, put at least two drops of oil(preferably mustard oil) so that dal ka pani bahar na aye.
    Yeh hostel wali theory hai apna

      Perfectly explained..i follow the same to same..add a small spoon of ghee daal will not come out while boiling..lid will be easy to wash afterwards 😃nd daal will smell nd taste better

    I tried yesterday and it’s really amazing and specially it’s without tomatoes love it because my father in law who is 86 years and glaucoma patient can not see,this Dal is his favourite but he can not take tomatoes in his diet so first time I tried without tomatoes and he became very happy to have it because I am in Toronto and it’s hard to find without tomatoes from outside but I love your recipes I tried so many different things thank you for teaching us how to cook delicious food at home , one more thank you from my father in law

    Ranveer is Super ... I love his recipes , so simply and briefly explained , at the same time does not drag on the process for long , He is witty and smart too . Plus I love the way he speaks about the nutritional values and the history of the dish .

    I always fry the onions, ginger, garlic with turmeric, cumin and red chilli first then add the dal and saute it for few minutes then adding salt and water I let pressure cook it for 2 whistle. After the pressure releases itself then adding little warm water to adjust the consistency i add fresh coriander and serve it. And I only use mustard oil for the dish, because in North East India and specially in Assam majority uses mustard oil for every dish. And we don't use hing that often in our every day dishes because we always like foods to be light and simple.

    I am an Indian from Lucknow who shifted to Germany 4 months back and for the first-time you made me homesick. I stumbled upon your #LucknowNahari and fell in love with the way you narrated the process and the history like a wise old storyteller/poet who is in love with cooking.       Actually he is not telling the whole recepie. Tomato takes the dal into another level. Plus add some dhaniya powder and garam masala after putting Onion. Then add tomato and let it seperate oil and then add daal . After this go for the second tadka. Garnish with dhaniya.

    I love the way you explain every thing and most important is you always tell not to add salt while boiling daal even I agree with you that adding salt won’t let it soft.
