The thing with Michael Schumacher is that he always used to drive with the car; he for example floors it but then uses the slight oversteer to position the car or even shift up earlier so that the engine doesn't develop too much power for that specific situation though he still doesn't have to lift. It's amazingly stunning to look at. What a legend.
He drove different with the v8 cars towards the end of his career. The style you described was common in the traction control era, especially with top drivers on top teams. Alonso would specifically request an understeery car to provoke oversteer under power to increase rotations in slower corners, for example

It was most amazing to be awake at 4am to watch it live. I enjoyed sitting at my desk jotting down notes and plugging numbers abput average track speeds of different cars and compating them with the other cars during stints. I did this along with Steve Matchet talking the numbers during a race, while David Hobbs would interupt him to talk about what the drivers are doing during intense drivers battles. And the occasional mention of that moment when Ross Brahn got Michael's radio and said "Um, Michael, we need you to do the next 16 laps under the lap record." [V10 whail during deceleration] Downshift, Downshift, Downshift, Downshift, Downshift........ [Michael's voice- Ok!...... V10 acceleration, upshift, upshift, upshift. Amazing times, gone forever.

Actually, KERS is awesome, I'm glad it's now integrated with the car's main power output rather than being driver-controlled. It makes so much sense, and actually makes for pretty good racing when done right, for example, WEC. DRS is another story. But does prove well in DTM, and unlike F1, DTM drivers are given weight penalties when they start outpacing the entire field.
