Becky, When my 3 kids was young teenagers I was a single mother and I worked and went to college both, fulltime. We survived off of 30 day bulk freezer meals and crockpots. One of the request from my kids was chicken nuggets, so i would take one day on the weekend and made between 150-200 chicken nuggets. Cook them enough to lightly brown them but not fully cooked. Then froze them. The kids could pull out a few at a time and pop into the oven to cook at their leisure. There was no way i could go through the trouble of making them every time they wanted some! If i was goingbto make them, might as well make plenty to last several meals.

Hi Becky. I wanted to answer a few questions you had for viewers in some of your episodes.
    1) Use a magazine holder to store your silicone storage bags.
    2) the fronts of your island drawers were a popular design trend in the 2000's for an "old fashioned general store" look. People filled the acrylic cabinet fronts with dried pasta noodles, dried beens, etc.
I really enjoy your shows, thank you for sharing your talents with us!

That method of coating the chicken is also how I do zucchini when I make Hobak Jeon which is a Korean pan-fried fritter. Just slice up some zucchini into rounds about a 1/4 of an inch thick, sprinkle it with some salt and wait until it's pretty flexible. Coat in flour or cornstarch and then egg. Fry it up and serve with a dipping sauce of 2 parts soy sauce and 1 part rice vinegar.
I'm growing gochugaru in my garden this year. I'm hoping to be able to make my own Korean chili flakes. Wish me luck!

We’ll just a few years ago my granddaughter and I were making some for Christmas, and I thought we should try melting the marshmallows in a very large bowl in the microwave! After marshmallows are melted I add the butter. It is so nice because at Christmas we like to make different kinds of shapes, so if the mixture starts to cool, we just zap it again and then is pliable again. Easier clean up too!

Great ideas for meal preps, but you may want to cut down on the salt when using Worcestershire sauce or soy sauce in your marnades. The chicken will absorb more when thawing than when you add it just to cooking.

Hi Becky! You’re all about not wasting anything. I can recommend having an electronic citrus press (the kind that spins around and you press the orange or lemon on top and it removes all of the pulp and lets the juice seep through in a container below). I have tried these hand pressers and the amount of juice you gain more of the electric device is astonishing.

I make a fantastic marinade that can be used for chicken or a roast.
2 cups red wine, 1 cup oil, lots of minced garlic, and 2f pound of sliced mushrooms. Mix it all up and pour over chicken or beef and freeze. This is a very popular marinade that we use in the oven or on the grill.

The brown butter RC treats. I got a little too worried about burning the butter so it wasn't as nutty as it should have been. Also, I had big marshmallows and they took longer to melt. I used a bunch more vanilla because I like it, and added another cup of RC. In future, I will cook the butter longer and add an additional 2 cups of RCs. Good recipe for butter lovers! Yum

Hi Becky! If you like Rice Krispies treats, then maybe you should try using Mars Bars instead of marshmallows. The recipe I use calls for melted milk chocolate on top of the squares and I sometimes add sprinkles too just to finish them off in a pretty way!! Pre-pandemic, I helped at a kids activity group for 4-9 year olds and as it was my birthday on one of the nights the group met, I took some Mars Bar squares along for everyone. They went down really well, but then I think kids love chocolate anyway and we had all come back to the building where the group was held from a treasure hunt, so I think the kids needed a snack! 😀Hope Joh enjoyed the sweet and sour chicken you made this night. If you wrap lemons and probably limes in tin foil, then you can freeze them whole until you get round to using them if that helps you at all, or you can zest and juice them and freeze the zest in a bag and the juice either in ice cube trays or in a container that you can keep adding to. You probably know all that already though!

What I like to do for a "Master List" is print it out with plenty of space, laminated the list of always-must-haves and then when I open the last (or next to last) of something, I can use a dry erase marker to circle the item I need to replenish! You can even write directly ON your freezer with a dry erase what's in them, then as you take things out, just wipe it off!
