Because normally, the average Servants simply lost their memories from past Holy Grail wars, making that they won't remember any grief, grudge, nor tortures that would suffered. But for Saber, she will remember any war, meaning that she will have to deal with new traumas, like be forced to destroy the Holy Grail in the Fourth war, making her lost the chance to get her wish. heavens feel kinda explains the grails content more but il do a quick version the grail summons servants and then when they die their energy is collected into the grail it is basically a big battery however it was corrupted by angra mainyu so the energy cannot be used also the lesser grain is what we see here and the lesser grails energy is used to fuel the greater grail and the original goal of this was to reach the route and obtain true magic.
Actually when a servant is defeated the hero don't disappear. They are recorded in the Throne of Heroes. Basically a servant is a nerfed version of the original hero. They have the heroes memories and powers but their are like copies created by the Holy Grail.
Adding that depending how great and acknownledge be their legend, this also help to determines the potential of the Servant. Like the King Arthur, that as his/her legend is so famous and known in many stories and tales, makes that Saber be a very powerful Servant.

I know people are going to disagree with me and say that Zero somehow spoils more important plot points, but to me this episode is the number one reason why I would recommend anyone to watch Zero before UBW, here Gilgamesh basically spoils the end of Zero for anyone who hasn't already watched it.
@@Vid_21 On paper yes, that is suppose to be the proper sequence of events, but due largely to how ufotable adapted the series UBW lacks a large amount of context for things that are only talked about in Zero, because as the animated project before UBW they assume audiences will be familiar with Zero and have watched it prior to going into UBW. Same reason why Ufotable speed ran the beginning of Heaven's feel, they assumed everyone was familiar with UBW and had no reason to retell that portion of the story. In my opinion the way Gil talks here about Zero's ending is suppose to be a recap of events the viewer is already familiar with.

It doesn't spoil anything in zero. It's impossible to spoil zero because you're already meant to know what happens in ubw before zero.
