After watching some of your videos, I am beginning to feel less despairing in the kitchen. I went to the grocery today and stocked up on healthy herbs and seasonings. I’m chopping veggies with confidence. It’s an unpretentious start. Thank you for being a great teacher.

My girlfriend got it for me, and he has a LOT of variety, tips on prep items for your pantry, alternative suggestions, and just some really amazing recipes. I just made his Reuben sandwich (again) this weekend, and I am amazed at how good it is by simply following his methods.

I've been using the water I rinse my rice with to water my plants outside! It actually does help them grow. Some people say it's a myth but it actually works.

My mom spent hours in the kitchen, her clean kitchen, which was her favorite place, cooking the best meals. She always went that extra step to make it special. Ok, hatched this puppy last night. No corners cut. I was sure I had a big bag of rice in the pantry but I didn’t. No problem, had some couscous, and it jumped into the breach enthusiastically. I cooked it separately in some of the broth and then plunked it on top for the last ten minute, lid-off bake. I never thought of throwing a corn cob in the stock pot so that was fun and it really does kick up the flavor. Mise en place and “clean as you cook” are de rigueur in my kitchen. As axiomatic as “whistle while you work” (which I never do. Whistle, that is. Rarely work either for that matter. I DO often sing while I cook … so … there’s that). I get down pretty hard on any who don’t follow those dicta. Well … just me, actually. There’s no one else there. The dog and two cats. Josie has no interest and the cats watch impassively from various perches occasionally beseeching me for food. But I digress… Most fun step is toasting those herbs then pulverizing them in the M&P. We’ve got a hackin’ big unit that makes short work of the most recalcitrant pepper corn. So I did up that mash with the dried chilis, lemon zest, the whole shebang, and gave it a taste - freakin’ killer hot! I mean smoke out your ears fire. I would have gladly plunked that right in the stew and loved it to death but that would never pass my wife’s palate! So I packed it in a little Tupperware thingie in the fridge for some future personal use and started over, dialing back the heat. For protein I added the chick peas, ala Derek, but I also baked some extra firm tofu, cut into 3/4” cubes, with a bit of olive oil and sesame oil and tossed them in pre-bake. Green beans are in season so of course they went in. I was tempted to par-boil first but resisted, employing Derek’s small-dice approach, and they came out precisely splendid. Oh, I soaked a few sun dried tomatoes, chopped them up and added them to the veggies and added the soak liquid to the broth. Mushrooms! Cant believe that Derek, of all people, didn’t toss in mushrooms! Well I did. And then, you GOTTA fry those onion wedges til the surfaces are slightly caramelized and the squash to a golden brown! This evokes all that flavor, gives it nowhere to hide. DON’T cut that corner. Jen, my wife, gave this dish an enthusiastic, thumbs-up review. We ate it around a campfire in the back yard of our northern Vermont home in the gloaming of a crisp nearly-autumn evening. Leaves are starting to turn. I made about half of Derek’s recipe and it will provide a second meal tonight. Thanks Derek, great dish!!

I can smell this. I love this approach to cooking. I get a vegetable delivery every two weeks and it could have anything in it, so just doing what feels right is the way to go.
