Aubergine Fillets
(What’s shown in the video will feed 4)
Ingredients:
4-6 medium-sized aubergines (eggplants), sliced in half
2 cups plant-based milk (oat or soy)
2 tablespoons apple cider vinegar
4-5 cups panko breadcrumbs
2 tablespoons dried parsley
2 tablespoons granulated garlic
1 teaspoon celery salt
4-5 teaspoons minced Nori (little less if you use wakami or Kombu as those are stronger flavored
Salt & pepper
Instructions:
Roast the eggplant halves face down for 20-25 minutes until the skin becomes wrinkly. Let them rest to carry over cook; this makes it easier to scoop out the flesh.
Scoop out the flesh from the skin. The eggplant is now ready to be breaded.
Set up your breading station using the wet/dry/wet/dry method. Bread and coat the eggplant halves, preparing them for frying or baking.

Simple Cole Slaw
Ingredients:
½ red cabbage, shaved thin
2 medium carrots, grated
½ red onion, julienned
2 tablespoons vegan mayo
2 tablespoons apple cider vinegar
2 tablespoons date syrup or powdered sugar
½ teaspoon mustard powder
1 teaspoon celery salt
1 tablespoon fresh dill, chopped
Coriander/cilantro sprigs for garnish (optional)
Pinch of salt
Pinch of pepper
Instructions:
Shave the vegetables, make the sauce, and combine everything well.

Tartar Sauce
Ingredients:
4 tablespoons vegan mayo
2 tablespoons pickles/gherkins, chopped
2 tablespoons green onion/scallion, chopped
1 tablespoon fresh dill, chopped
1 teaspoon capers, chopped
1 lemon, juiced
Salt and pepper to taste
Instructions:
Mix all ingredients together well and chill to help solidify. Serve cold with the fillets.

Buffalo Style Potatoes
Ingredients:
500g small to midsize potatoes, cut into wedges
1 small bottle hot sauce
¼ stick vegan butter
Salt and pepper to taste
Instructions:
Roast the potato wedges at 200°C/400°F (fan/convection) for 30 minutes. Check and move them around a bit, then roast for an additional 10 minutes for extra crispiness before serving.

I made this for dinner. Your recipes are easy to reproduce. Huge hit in our house! The fillets were amazing! Thank you!
You can also salt aubergine slices, squeeze out a bit of the liquid,
fry them in (neutral) oil, then (out of the pan), squeeze some lemon over it,
and finally drizzle some nice peppery olive oil over it. Lovely.
Works with zucchini as well, but you don't have to squeeze that.
I need to avoid oil for health reason. I appreciate it when you show us oil free version. Thank you.
I practically want to cry. THANK YOU for the oil-free. Seeing a pro get into the details of working with oil-free is such a relief, so confidence inducing, so freaking gratifying. I know I can just eliminate the oil - I know I can use an air fryer or parchment paper or a silpat or broth/water/aquafaba/some kind of liquid but....after we take that detour, we're usually on our own in a recipe. To chase that down - to stay on the job of still making something great but minus the oil - is top-tier and a real kindness for us non-pros out here. MUCH appreciation Derek.

But your brain is mostly fat & takes physical damage if it doesn’t have adequate fats in the diet. They’ve linked low-fat diet with dementia, and also lack of C15:0 which is mostly in meat fat. My mother-in-law died of dementia and I just got divorced three years ago because my husband has dementia and went all paranoid before the doctors would do anything. he’s going to be gone in 5 to 10 years in the same horrible manner his mom went. I will do absolutely anything it takes to avoid that after witnessing it. Everybody makes their own choices. But all these extreme diets are being discovered as unhealthy. Anything to extreme seems to be bad for you. I’d rather balance out everything. That’s my choice. ❤

@@chelseacraft4669Just choose good fats, i.e. the fat that comes naturally in the food. Processed oil is very nutrient poor but calorie dense and definitely not good when you’re on a vegan diet. Sorry to hear of your troubles. My best wishes to you.

Oh, I so agree. I lost my 2 black labs (brother and sister) within a year of each other. I used to love on them in exactly the way I see here. They were the sweetest, happiest pair of dogs. They made me just as happy. I love watching Frankie too.

Pro tip ! Dry toast your panko mixture before breading your fillet and putting it in the oven and you'll get a near identical texture and color to the fried version ! Just don't go too far dark on the dry toastig as you want it to finish in the oven, not burn.
Also, I really dislike the texture that nori can get when it becomes soggy, so I always find it better to make a broth with kombu to flavour things instead. So if you're like me you could easily add some kombu broth to the buttermilk mixture.

I’m not vegan or even vegetarian, but love making these recipes. Vegetarian food gets a bad reputation for all of the unhealthy “Franken-foods” out there but this channel makes vegetables taste good for what they are. No need to masquerade them as something else.

OK, if you're taking requests, I'd like to submit two. First, a lesson on how making my tongs click and clack the way you do. And also, I'm the biggest sucker for a grocery haul. I'd LOVE to see what kinds of things you buy regularly. And if you buy according to what you're making to eat for the week. Not when you're planning a TH-cam video. Or if you buy certain things regularly and then create meals based on what you have/what you feel like eating on any given day.

My father was born in Serbia in 1908 so you got .... Greek dishes, Middle eastern ; he actually translated a cookbook because ... let's face it he made a mess in the kitchen I miss my guys .... from his notes this is an idea .... cut the aubergine into 1 inch steaks and salt to remove excess liquid, wash off salt pat dry; if you have a grill pan season with lemon ok salt and liberally with granulated garlic. It's incredible. as always tx for your channel.

Oh. My. Goodness. I just made all of this. I cannot believe how good it was. Seriously. My husband and I met in Milwaukee and used to have a good Wisconsin style fish fry every Friday night. Fast forward moving to Europe 23 years ago.. nothing I have made has ever come close to this. The coleslaw needs its own share of praise, but let me just say, I am amazed by the aubergines. My dish didn’t turn out as gorgeous as yours but it was delish and a HUGE hit with hubbs. He despises eggplant but scarfed it right up plus seconds AND the fries were the best I’ve EVER made and I’m from Idaho - potato country 😊 Now just need to figure out how to get him to eat mushrooms 🤷♀️ Thank you for sharing 😊❤

Dear Derek, this is spectacular! I just cooked it (a bit improvised though), made the coleslaw with some homegrown carrots from the balcony and used the leaves as a dill replacement. It tasted sooo good!
