      @@GameFuMaster correct way to use tofu in fried rice: not silken tofu, silken tofuf is for soup. Normal tofu -> cut into cubes -> fried them golden brown -> put into fired rice.

      Agree except well-done steak doesn't do justice for me. Pouring cold water to rice in the middle of stir-frying, my god. It must be like well-done steak in (store-bought) tomato sauce, with boiled potatoes!

      It depends on the rice. If it is made with short-grain rice, chopsticks are fine tools since it tends to be sticky. If it is made with long-grain rice, using a spoon is better. If it is made by Jamie Oliver, it sucks.

      Honestly smashed tofu is the least offensive thing in this video. I mean sure it might not taste as good and is uneven, at least that's still edible. Imagine if he actually cooks in a more rural area where water isn't as clean, and he splashed the pan halfway frying?

    The only time I break tofu was when I mix it with battered egg. Make an omelette with it. Put bean sprout, rice cake & crackers . Pour special spicy peanut & petis paste. We called it tahu Telur/ tahu tek

    I had atopic dermatitis
    I have been to multiple dermatologists all over the world, everyone gave some medicines that used to work for a while but could not cure my skin permanently
    Doctors said that it will stay lifelong and I have to apply the oinments whenever it gets bad.
    But then I saw this video, and by god! As soon as my skin touched the fried rice my skin healed completely! Saint Olive has performed a miracle! God bless him!

    I’m Chinese and I’d like to formally apologise to all the Italians I questioned when they despised ketchup on pasta. I understand now. I feel the pain.
    Guys I’m well aware Filipinos put ketchup on their pasta, and I love Filipino spaghetti. But first of all I was talking about Italians, and second of all, they don’t pull out a Heinz Ketchup bottle and just squeeze that crap over cooked pasta. And I’m sorry if that wasn’t clear because that’s what I meant.

      I think the rice was sticking to the pan so he had to add water to deglaze it. It is because he used olive oil which basically evaporates at those temperatures.
      Honestly using olive oil, which has such a low evaporation point, to cook asian foods, which use high high heat, just shows that maybe the chef doesn't know what they are doing with that particular dish.

    I watched this before watching Uncle Roger's reaction video.
    The things that caught my attention:
    1) Putting cold water straight from the tap in the middle of a stir-fry. Granted you could put some liquid in, like oyster sauce or soya sauce, but it has to at least be at room temperature.
    2) Lack of smokiness in the cooking. This is an add-on from the 1st point. The whole idea of fried rice, is to create that smoky flavour resulting from a high temperature. You can't really achieve that using olive oil, which has a low smoking point.
    3) Breaking tofu. The way he broke it was to possibly mimic breaking of feta cheese. Tofu isn't feta cheese. I would deem that act almost sacrilegious.
    4) I foresee a lack of a balance of flavours or even taste. There's only chilli jam and salt. Where's the pepper? At least use some black pepper.
    5) Why oil the bowl? Fried rice is meant to be dry. I do not understand the rationale behind oiling the bowl with raw olive oil. This isn't pasta.
    I was left dumbfounded with this video. Uncle Roger's reaction only justified my feelings.
    Jamie, please do us a favour and stick to Italian (fusion) recipes, learnt from Gennaro Contaldo.

      @@ssanimess not really. white pepper actually has a presence in many Chinese recipes. I just don't think you would ever add black pepper to any Chinese dishes except maybe the known 5 "black pepper XXX" dishes, which were heavily influenced by western cuisine.

    Ummm, the reason to use rice that's been left overnight, it's to get the rice dry enough so that you can coat each grain of the rice with your seasoning / egg yolk.
    Not sure why it needs to be rehydrated.

    I fainted bc of these reasons.
    1. Saying it’s a side dish.
    2. Starting with green onions besides garlic.
    3. Using packeted rice.
    4. Putting chili jam into the rice.
    5. Using the faucet to put water on the rice while it’s cooking.
    6. Crushing the tofu with bare hands instead of slicing it neatly into flat cubes.

    He's got so much more appreciation for Euopien food than for Asian food. Nailed the right ingredient and techniques. Lamentably he's got little appreciation for Asian cuisine. When making Asian foods, he used packet rice, chilli jam, and other cheap ingredients and then messed every technique. I think that in his mind Asian cuisine is just cheap Chinese takeaways opened by firat generation diasporas being pushed out by wars that had no choise but to open a takeaway to make a living. But Asian cuisine as a culture is not cheap and basic like the way he presented it.

      there's nothing wrong with packet rice. Great fried rice literally use cold dried rice, most of the time have been cooked hours earlier. Tofu are wet and moist. Literally gonna compromised the cold dried rice, so nah. Chilli jam probably better use as topping or side sauce. He knew the asian's palate but he doesn't know to execute it. Dude ain't a chef

      He uses easily accessible ingredients to people in the UK from all backgrounds to encourage healthier home cooking, he’s not trying to perfect any cuisine but making cooking easier for your average household

      @@georgec3650 he didn't use any oil and also no soy sauce. The packet rice is just a cheat to give the fried rice some color since it's already brown by itself. Fried rice is greasy, it's in the name but because all he did was use freshly cooked rice and add water halfway, all you're getting is bland wet rice and even the chilli jam doesn't hold up, I've tried chilli jam myself and it tastes toxic

      @@georgec3650 and the tofu doesn't add anything since its flavor is very faint and works best in light dishes, soups, or in a dish that is heavily sauced and gives the time for the tofu to marinate in their flavour. In a dish where you're supposed to have flavours that pop, the raw broken up tofu just makes it worse. And let's not skip over the fact he shredded it trying to make it look like chunks of chicken

      When I run out of ground meat for my stir-fry veggies, I usually use broken up (semi-firm) tofu. But I make sure to fry them up a little, then season with oyster sauce. 😊 But putting broken up tofu in fried rice, I think we all know it's a total shame. 😅

    Sorry Jamie, but silken tofu in fried rice?? really? Fried rice should never really be "juicy". dougan would've been a better choice imo

    - Use wok, MSG, garlic, actual rice and onion springs as garnish
    - Don't break tofu
    - Don't use olive oil, chili jam and water during cooking.

      I use frying pans as substitute for wok since I only cook for myself,but I use wok if the whole family will eat it for breakfast
