I based my recipe off this one but I use several softball-size meatballs with 1/4 of the vegs medium chopped mixed in. Since I don't have an egg, in a regular pit smoker over oak I smoke meatballs abt 45 mins on top til 1/4+" skin forms then coarsely crumble into chili + another lb of completely crumbled ground beef. Smoke uncovered 1 hr then simmer covered 2-3 hrs or til chef's beer runs out. Keep chili abt 200 degs F throughout.
Just a reminder for everyone that "70 Degrees" is measured in Celsius. For any Americans out there, that would be 160 degrees Fahrenheit.
