      I think I’m done looking for a go to chili! I made it using ground venison, hot Italian sausage and smoked brisket. Really impressed with your chili seasoning! Couldn’t wait the full 8 hours to have a bowl so I grabbed some after about 4 1/2 hours. Maybe the best chili I’ve ever tasted. It’s still simmering on the stove. I’m looking forward to eating another bowl tomorrow!

    My husband passed away January 1 2023 and I decided to master the Treager to fill my time. You have helped me do that. I’m 81 and loving every minute of it. Since it is just me I enjoy cooking for Ventura County, CA Fire Station 21. They always came when I needed help with my husband (a retired Srgt with Ventura County Sheriff’s Department.)Thank you for giving me meaning to life.

    I have used the same chili recipe for years and won countless cook-offs with it but I decided to try this. It’s very similar other than the chipotle in adobo and the breakfast sausage. It was amazing and I plan to use this for my next cook-off and see how it does.
    One thing I did different was purée the chipotle peppers to infuse into the whole dish with the flavor.
    Amazing job, Matt. It’s a hit.

    Hey Matt! This recipe never gets old and myself and my family have been using this recipe when it first came out almost 3 years ago. You are right; its a hit at almost any event as we use it for any family function and it could be summer time as its just that dang good! Keep the cooks and videos coming as we look forward to them every time.

    Chili is one of my favorite recipes to play with, this is one of the best without going through the trouble of rehydrating peppers yourself! I do like to mix and match tomatoes, also usually add in a tbs of cumin

    I made this recipe for Father’s Day today. 8 hours at 225 deg. F. in my smoker. This recipe makes a little over 5 qts. of chili to start so a 5 qt. Dutch oven will be very full, 7 qt. or larger would be optimal. I used a 9 qt. Dutch oven and It cooked down to 4 qts. after 8 hours. I followed the recipe rather closely, subbing sirloin for chuck roast and 1 lb. of hot Italian sausage instead of hot breakfast sausage. The chili came out awesome! Everyone in my family loved it. I’m not a fan of beans in chili myself and here in the Northeast in New England it’s almost impossible to find chili without beans. The heat level is moderate and just about anyone should be able to eat it. The 1 lb. of cubed meat definitely makes it a hardier meal alright. This is a solid recipe that would be great as a base for a lot of future experimentation and different variations. I’m no chili expert or connoisseur by any means but I know what I like and I like this one! Thanks for posting this video.

    Made this chili for Super Bowl party and deemed the best chili everyone had ever tasted! I do like the smoked chuck roast instead of beans. As far as your videos, keep them coming and I truly like the step by step method in which you do things. And I smoked mine on my 1st gen Traeger (for those who remember the Little Tex now the Pro 22).

    Matt love the channel. A couple of years ago I saw your Brisket chili and I make it several times a year. My family went from tolerating chili to loving it and requesting it. Your chili seasoning is the bomb and I always now have 2 bags on hand. Keep up the good work!!

    I just won the church chili cook off with this recipe a few weeks ago by watching the video from a couple years ago, AND finally took down the reining champion.............my wife. I told her I was coming for her and needed something special, so this was what I went with. I love it!

    Great video, MeatChurch! As a historical note, the original reason why Texas Red (or any genuine Texas chili) doesn't have beans is because that's what Cookie fed the cowboys on for most of the cattle drive. Beans were cheap, plentiful, didn't spoil, easy to cook and packed lots of protein. Beans were served daily and the men got tired of them after a while. On those rare occasions when they had fresh beef, the last thing they wanted to mix it with was beans!

      I’m from Texas, and honestly I can’t even imagine chili without beans. I honestly think that the whole “no beans on chili” is just a fad.

      Not a fad, @@abmtz8537 ... the original Texas Red had no beans because cowboys wanted something without beans! The main reason beans were put into chili is because beans are cheap filler. Chili was a poor folks meal and beans would make a pot of chili go further. Beans were put in by necessity, not choice.

      True, @@ryankiblinger3382 good point. Honest to God chili doesn't have tomatoes because Cookie didn't have them in his chuck wagon. He had masa flour, dried chili peppers, garlic, cumin, onions (if he was lucky) and that's about it!

    I’ve made this recipe twice in the last 2 weeks. Hands down the best chili recipe out there!
    You would think award winning chili should be more complex to pull off but no, super easy! It’s a fantastic way to keep a big crowd nice and warm!

      But if you like making your own, there’s nothing wrong with that either.

      @@Cdhowe45 Well, a) because I don't want to pay $11 to $14 for the spices alone. b) I like the idea of using fresh ground spices, and, c) I don't mind taking the time to make my own spice dump (as Matt did for his Texas Red chili). But, yeah, it's great to have the option of using a ready made chili seasoning.

    Made this last night in my crock pot ( Dutch oven comes today) This chilli is phenomenal! I stick to a low carb diet so chilli was off the table because of the beans. Not anymore! Thanks Matt! Can’t wait to make it again on the grill in my Dutch.

    Won my chili cookoff at work with this, awesome recipe thank you so much! Only change I made was I used Guinness instead of a Boch style beer as it was what I had on hand, and used hot italian sausage. Hats off, your seasoning on point!

    Add another winner to the mix! Thank you so much for this recipe. You said make it your own; this is what I did:
    - I seasoned a brisket overnight. Butcher shop cut me a 1.88 lb slab
    - seared it on both sides in a cast iron skillet (so it developed a nice crust) early am the day before the contest, then roasted it with a baste wrapped in foil slow & low all day then let it rest
    - after work, added 1 lb of sirloin, 2 lbs of ground beef and 1 lb of ground breakfast sausage
    - used a Guinness and added a tbsp of cacao powder and a few drops of liquid smoke (I don’t have a smoker and this is the taste I was going for)
    - followed everything else step by step that you did only added a few things bc I had more meat and was envisioning a specific flavor. Oh added 1 more tbsp of your delicious seasoning - judges blindly tasted all chilis and words to describe this were “phenomenal” “best chili I ever had” “depth & complexity in flavors are outstanding”

    My husband is from Texas, I'm from Tennessee.. I grew up on chili with beans and clearly he did not. There is a divide in this household and I'm determined to find a recipe that brings this home together on game day! I can't wait to try this recipe it sounds amazing!

    As an Ozzie who lived in America for a while, I miss Texan BBQ big time. We just don't do BBQ anywhere near as good as you guys. In fact, we Australians should be sitting at the kiddies table when you guys light up a firebox. Yes, we are that bad! This chilli vid popped up on my stream and I'm so happy it did.     I just made this recipe. This was The BEST chili i have ever made. The smoked chuck and then smoking the chili was amazing. It was perefect for me, there was a little too much heat for my wife.     Finally made this. I concur, this is absolutely amazing. The wife picked up "salsa style" fire roasted diced tomatoes by accident. It was a good thing. In addition to the fire roasted tomatoes, it also had bits of fire roasted jalapeno's and chipolte's as well (not much, but it's there). Other than that, straight as in the video (28 oz tomato sauce, and 4 cans of the fire roasted). If you have not made this, you need to!!!

    Got a batch of this on my pellet smoker right now. I've been using the methods from this video aside from adding beer and the meat church seasoning. This time is my first time with the meat church seasoning and do the season I smoked a turkey breast and then also cooked some ground turkey. We're at 6 hours on the smoker and I just had a taste. Sensational

    I pulled out the leftover prime rib roast from Christmas and made my version (with beans). I've had my dutch oven in the smoker all day and it's the best flavor. The smoke really kicks up the flavor.

    THIS is the chili recipe I've been looking for... not for the debate of beans or not... but, for how it's put together with different cuts of meat. It's not flat with all ground beef as a base... But, combining ground beef with seasoned sausage, and then adding sliced pieces of smoked steak, is genius. Multiple levels of texture and flavor is a winner. Some folks are commenting about the spiciness, but, I'd tone it down a bit so I could enjoy more of it. This will be an RV camping recipe to try soon... with the chili in the crock pot while I slow cook a steak on the charcoal grill to cut and add to it. Cornbread muffins or campfire russets would be perfect as sides. Congrats on the busy cooking meetings with the teams, and the re-grand opening of the place.     I gotta say I'm very proud of my personal chili recipe. Smoked brisket and venison chili ground meat, a little dark roast coffee and a touch of semi sweet chocolate at the finish. Won a few contests with it. But I'm very interested to try this one, if only to enjoy a different recipe.
    Gonna order your chili seasoning and give it go. Only thing I worry about is my wife doesn't anything with ANY pick in it whatsoever and this recipe calls for one can of chilis in adobo. Guess we'll have to see if she can take it because I'm cooking it.

    I've been on a quest to find a solid chili recipe for the past year. I've had several "best chili" recipes, only to be disappointed. This one absolutely rocked the house! Bold flavor. I think the only thing I would change the next time I make this would be to use more chuck roast. This was my first time to try a Meat Church recipe. I'm eager to try some more!

    I add an extra pound of meat to mine, 5 lb Champion Chili! Fry a pound of bacon in the Dutch oven, the brown the grind in the bacon grease, drain. I also smoke some chilies and jalapenos at the same time as the chuck. Good stuff, thank you for the video

    Another great recipe!
    The best chili I've made was when I cubed up some leftover brisket with my ground beef and sausage, and then I went with Guinness for the extra liquid.
    Now I know what I'm gonna make on Saturday!

    When I make chili these days, I try to add another beef product to the ground beef and brown it in the same pot as the ground beef before adding the onions, garlic etc.
    I haven't yet added smoked meat. I'll have to try that.
    Oh, yeah, I loved your Texas Red chili video. When I made it before seeing your video, I didn't do a rue, but the peppers were prepared the same way.

    Just made this recipe. Pan seered the chuck roast and used a slow cooker on high for 3 hours instead of on low all day (I had to try this out when I got home after reading it!), it turned out great!
    It was super easy to make. The most difficult thing about this is dicing the onions and searing the chuck roast. If you know how to do those two things, you can make this dish lmao. I added a modelo instead of a dark lager. Also, I used some other chili-seasoning because I did not have yours on hand. Either way, this will be my go-to base recipe for chili!

    I’ve been watching TH-cam for 20 years and never commented on anything….just not my bag…until today! I tried this recipe ingredient for ingredient except the chili seasoning (didn’t have and too pricey at this time). Used the new four sixes chili mix and a bottle of Michelob Amber Bock! Man! Absolutely amazing recipe!

    My new go to chili! I used ground venison, hot Italian sausage and smoked brisket. I’m really impressed with your chili seasoning Matt. Couldn’t wait the full 8 hours so I pulled a bowl after about 4 1/2 hours and I think it’s already the best chili I’ve ever eaten! I’m looking forward to getting another bowl tomorrow after it’s finished cooking and has rested overnight.

    Growing up my parents would buy either 1/4 or 1/2 cow from a local farm, depending on how many people were on waitlist. The first thing my mom would make is chili. Then, during the fall she made venison chili during hunting season. She ONLY served it from mugs. I only found that wasn’t “normal” when my buddies dad made us chili one day.

    I knew after the first eight minutes I’ve been doing chili wrong all these years all you had to say this is Texas style hell man I’m from Texas, I didn’t even know this, having using cheap recipes that call for beans and such over the years, but this, this what you have presented here, now that is one bowl or many bowls of awesome.. I love the German part of it as I’m half German and I will use beer. Thank you for this I will be using this recipe from now on

    I used this recipe and the seasoning (with beans because I did not have the brisket) for my very first pot of chili. We had a charity chili cook off at my local cigar shop and I won! Thanks for helping out!

    There's insulated. Mugs are awesome and I do the exact same thing. When I make milkshakes I put them in my yeti tumbler because guess what it's insulated and it doesn't melt! Soup and chili fit perfectly in those mugs and you can hold it easily without having to hold on to a hot bowl and your chili stays nice and toasty. Gotta love it 👍🏻

    Did this recipe with a tri-tip smoked like a brisket. But I seasoned the tri-tip with the Meat Church Chili Seasoning. Turned out great!

    I like you cooking shows they are some of the most informative, I wouldn't min a 25-30 minute video. I think it gives a little more insight. Your free how-to shows are great and I have supported your business.

    I do like to watch the cooking process of all the meat! It’s like eye candy to me since I can’t taste the end product.
    It makes me want to go get my own ingredients the next day! 😅

    I make a similar chili with some root vegetables like rutabaga, carrot, and radish. Last year I had a bowl of chili from the Keyhole Bar in Mackinaw City, Michigan that had jerk seasoning in it. I added some quality jerk seasoning to the serving bowl of my recipe, and wow cannot believe how good it is. Thanks for the videos.

    My dad use to make 10lbs of chili every winter and freeze it in blocks. I remember he would buy chili meat at the store i don't think it was ground beef i miss my dad he made some good chili he died in 1994. True Texas chili has no beans but u can add them if u want happy eating. merry Christmas

      He did a video a couple years ago, of the same recipe. He used a 7 quart in that one, and it had more room in it than the one used in this video.

    I won 1st prize for my Chili Cook Off with this recipe, both in judging and in people’s choice. I did a few batches in preparing for the competition. I was able to tweak the ingredients and amounts and get it just right 👌 crazy good reviews. Stood out amongst the rest, including a few full time chefs that competed.

    Streamlined videos please but love when you add extra tips while you’re doing cutting etc.
