I grew up in a big Amish/Mennonite community and each spring a whole group of people volunteered to help prep strawberries for the strawberry tarts and shortcakes that were sold to help fun the school I went to. As a teen I helped out a few years too. This recipe brings back so many memories, a lot of the methods used are really similar. There's nothing quite like lightly sweet pastry, real vanilla whipped cream, and piles of fresh berries.
My parents and siblings asked me how they were supposed to eat it with all the whipped cream I’d put on top of it. My reaction “ I figured out how to make this you can figure out how to eat this” it was pretty funny😅 it tasted so good though!!😍

It's easy, if you follow John step by step, it doesn't require to many ingredients and at the end you look like a chef. The end product is beautiful and quite delicious, if I could say so myself. I used the 2.5" mouth of a qt--sized canning jar dipped in cornmeal; I used European butter which I had to store sliced, in the freezer. Also used my own Raspberry cordial (my version of Framboise) to flavor the strawberries that weren't as ripe as I would have preferred. They could not stop raving about the biscuits, and strawberries (and served with the Reddi-whip whipped cream)!!! Thank you for a terrific recipe. P. S. with the 2.5" cutter, I had 13 shortcakes.

The best strawberry shortcake uses much more of the macerated berries with the juice. Don't reserve the juice but rather let it soak into the biscuits with the berries before adding the whipped cream. We let our berries soak in the sugar for several hours at least to become syrupy almost. So good!
I had flashbacks watching you make that dough, lol. I've been making different flavor combos of scones for the past 2 weeks. I still have a pineapple and coconut uncut dough in the fridge to bake up which was suppose to have already been done earlier but I got sidetracked and made a 3 layer chocolate cake that I filled/covered with whipped cream, strawberries and bananas. Omgee, I had the tiniest bite earlier and it's to die for!! Now you've given me another idea to use up the 2lbs of strawberries I have left. My thighs 😟 and tummy 😋 thank you John, lol...
Our family for many generations has always used homemade angel food cakes. We also use a potato masher to roughly mash the strawberries and add a little sugar as well if they’re not sweet enough. After cake is cooled we cut a slice and plop real whipping cream on top and finally pour a nice amount of mashed strawberries over all. I may try the “real deal” shortcake but hope it’s as delicious as mine.

A really great recipe and demonstration, exacting in every measurement...except the butter! I assumed that the two sticks in the video amount to a half a pound (8 oz.), even though it's twice the amount required in some other recipes. The result was delicious, buttery, and well worth repeating. Thanks.
I have to rely on machines these days but I find that if I just pulse the butter and flour I get a fairly good result. Thank you for a beautiful recipe and great memories of childhood strawberry shortcakes.
When it comes to macerating the strawberries, I like to put in a good dash of salt and pepper. It brings out flavors. You could also add a splash of good vanilla extract. Your shortcakes look amazing...

I've tried just regular biscuits and even cornbread with whipped cream and fruit and it is surprisingly delicious for such a simple combination
