Cake
½ cup unsalted butter, softened (113g)
½ cup neutral cooking oil (I recommend avocado oil but canola or vegetable would also work) (120ml)
1 ½ cups granulated sugar (300g)
4 large eggs, room temperature preferred
1 Tablespoon vanilla extract
3 cups all-purpose flour (375g)
1 Tablespoon baking powder
½ teaspoon table salt
1 ¼ cup buttermilk, room temperature preferred (300ml)
Strawberries
2 lb strawberries, divided (907g)
3 Tablespoons granulated sugar (40g)
Whipped Cream Frosting
1 ½ teaspoons unflavored gelatin
2 Tablespoons cold water (30ml)
2 ¼ cups heavy whipping cream (540ml)
¾ cup powdered sugar (94g)
1 ½ teaspoons vanilla extract

My dear mother's strawberry shortcake was phenomenal. She made two cake sized sweetened biscuits and macerated our home grown strawberries overnight. She would spoon the strawberry juice on each biscuit then add the strawberries to each layer. She made this every Spring and it's a fond memory. Mom was an incredible cook and baker and know she would've tried your version. Your cake look luscious. Congrats. 💙

You can make a glaze from apricot jelly by warming it up and add some juice from the strawberries 🍓 with a little red food coloring, then brush on strawberries for a shiny topping

what one could do with the strawberry liquid is to boil it with a teaspoon or more of cornstarch, let it cool then add it back to the strawberries

I am blessed to live in the Berry Capital of Canada, in the Fraser Valley, B.C.... so in the summer, I go from farm to farm and purchase blueberries, strawberries, and raspberries... such a great time to make these types of cakes during berry season! Save those strawberry tops!! Put them in a jar and add vinegar to cover. Put it in the refrigerator for a week or so!! Strain the tops out and use to make a fabulous vinaigrette!!

I don't consider a biscuit shortcake. I love a white cake mix. Jiffy cakes work for a smaller cake. I'm an iowa farm girl and this is how my mother did sjortcake.
Love the strawberry juice to soak into the cake. And I don't need whipped cream or ice cream..

I’m going to make this cake. It looks delicious! Can I make this for an event 2 1/2 days early and refrigerate it or should I freeze it and take it out out of the freezer the day I need it for a special luncheon?
I think 2.5 days will be just fine. Just make sure it's in an air tight container so it doesn't dry out. :)

Te explico: la hice pero me quedo líquida la masa con las cantidades pesadas... Le puse más harina buscando la textura de tu masa (cómo se ve en el vídeo) y fueron 150 GRS más aprox y no llegué a esa textura... Que crees que debo hacer? La torta quedó suave pero le salió demasiada barriga
Can I use salted butter and half the amount of salt? I use avocado butter and sometimes it's difficult to find it unsalted.

I doubled the recipe. I really outdid myself, but I made your maple cream cake and it was a winner so when a coworker said he wanted a strawberry cake and I saw this recipe I was like oh….fudge…instead of the cream cheese frosting I plan on make your chantilly lace frosting but protecting the jam with the cream cheese dam. I’m also doing a skittle surprise cut out core and stupid crystallized candied strawberries skewered down through the 3 layers. I know… stupid. I haven’t slept. No hubs on dish detail and studio apt here I might as well be baking in a galley of a cruise ship. I love doing it though! I followed your measurements to a T and still I came up with 3; 8” rounds. I tasted the batter I wish it were sweeter and more buttery but this is new to me so it’s going to be iced and nice. About to pull out of oven center almost done nice and puffy but oven is smelling like I’m in trouble.Exterior will need a trim. This was not a win and a lot of quality ingredients purchased to make
