    Hi there. I see people rehydrate shiitake mushrooms and once they’re hydrated, they cut the stems off. Why do you think they do that if it’s not necessary because I noticed you didn’t do it and that’s literally the first time I’ve ever noticed someone not cutting the stems.
    Also, I can’t wait to make this meal. It looks divine. Thanks for sharing.

    About Miso , I was taught that you should not boil it as it destroys the beneficial qualities,
    also dried shitake mushrooms are best soaked in hot water for 30min before adding to meal ?

    I’ve been watching loads of Japanese noodle restaurant videos this week, all non vegan ☹️But some of the owners are in their eighties & nineties, still going strong working 80 hour weeks. They definitely know something we don’t 🤷🏻🤷🏻🤷🏻

      I think they forgot to include link to the recipe this time but if you visit their website, it is on the main page, just scroll down until you see a photo of the ramen and click on it, it will bring you directly to the recipe. I hope this helps 😊

      @Nadia not as isolated fat (oil). we need good fats not oil. The person said they would prefer without oil, not necessarily fat, or that they don't eat fat. If one wants to optimize their diet to avoid processed foods then we should respect that.
