I don’t know why I had saved this video for YEARS without watching it, but I’m happy I finally did. Your method of alkaline noodle making is so, so much easier than conventional methods - and I didn’t have to ask my children to walk on the dough to get the proper kneading. This method really works! You do have to roll the dough on the widest setting multiple times to get it to the right texture and shape, but that’s easy to do. Thank you for this recipe.

I love that knife! It looks very cool. What kind of miso paste would you recommend? I see many in the shops here, but I never know which ones are best for different recipes.
+ Jess Bunty I was in an Asian grocery store, once upon a time, looking at buying my first tub of miso paste ever. Along comes a Japanese woman who cautioned me to always look for miso with Japanese writing on the package and to stay away with brands that include English on the labels. I have followed that advise ever since and I have always found delicious miso. :-)
Kyoto style white miso is very sweet and overpowers if you use it alone. Nagoya style red miso is the best for miso nikomi udon with its bitter taste but NOT recommended for ramen. Most brown misos are fine. Sendai, Shinshu (Nagano) and (Echigo) Niigata are recommended. You can blend them too. Sometimes cheep misos already contain dashi or MSG.
