For those who aren't confident in flipping the egg, you can take the pan and flip it upside down on a plate, so the top part of the omelet is now on the bottom of the plate. Then slide the omelet off the plate back onto the pan so the bottom can seal.

Add a little more cream (I like to use heavy cream) to your eggs and they will have a smoother texture and they won't brown as fast. Also, try adding a pat of butter to your oil. Butter makes everything better lol. Your rice looks so delicious!

hi im learning this recipe but i keep running into a problem: the egg keeps breaking apart. when I'm trying to fold the egg on itself, it just does not want to stay in one piece. the chopstick always rips the egg no matter how gentle I try to do it and in the end it just breaks off into small chunks or sometimes i just carve lines into the egg. how do i fix this?
