    I am so excited to try this, dear Victoria! I have just learned that I need to be ketogenic for health problems and that gluten bothers me. The dietician who worked with me said rather snarkily “I guess you can’t bake anymore!” I found your videos and learned that nothing could be further from the truth. I CAN bake. Thank you so much for all your hard work and your ministry.

      Yeah the Dr was very 'snarky' to me as well when she told me I had diabetes. Like it was MY fault.
      I quit baking for years because of it. Now...thanks to Victoria I can bake again! And it's yummy!

      @@lindajam8202T1D is not your fault. T2DM is essentially long term carbohydrate toxicity. As a former T2DM patient that I cured with keto (along with my fatty liver and asthma) it really was my fault. The fatty liver was also carb tox. It is the SAD (Standard American Diet) that is adulterated, altered, abundantly inundated with processed sugars, and supersized then advertised everywhere as if it is normal and healthy etc. combined that with our pushed, rushed, pressured work, society and social media pressured lifestyle…and the decades long FDA approved food guide pyramid built on the lies of carbohydrates as the bulk of a healthy diet…it’s not our fault in that sense. Our doctors have been pushing this dietary guidance for more decades than it has existed. They’ve not even updated to the newer FGP then tell their patients they are lying about their diets. The advised dietary intake for diabetics is built on carbohydrates as well! At least it was, not sure where it is now.

    When you introduced us the other day to einkorn Victoria, I researched it. I love how it's not GMO. There has been a thought for a number of years is that GMO wheat is the cause for gluten intolerance. I found out that einkorn berries can be substituted for steel cut oats and rice... depending on how you cook it. I think that I too will get berries so that I can have that versatility. Since einkorn is a bit carby, I would love it if someone with a Continuous Glucose Monitor would check out how it spikes their blood sugar level. Thanks Victoria for sharing this with us!

      Just remember that when others test their reaction with a CGM is THEIR reaction, and does not mean that it will happen to you too!

      @@pattyv341 Yes, like Steve at Serious Keto always says... own your own numbers. It's not perfect to hear others' numbers, but it would hopefully be a general guide. I imagine that the more insulin resistance you have, the worse your numbers would be.

      @sandra.phillips ooOOOOooo! I hadn't heard about the berries being good subs for rice/oatmeal! Must check that out for sure. I've been relying on freezing or refrigerating my rice to reduce the glycemic impact on my system. I'd love to find something better. I'll be researching this for sure!

    I just ate two pieces of delicious pizza. It still needs work, but it was the BEST one I've had since I started cooking Keto to control my glucose levels. Forty minutes after eating PIZZA, my glucose level is 3 points lower. And SOOOO happy to have Einkorn back in my life again. Can't wait to keep exploring! Thank you!!!

      @@nanasturtlejustme9758 I used the Einkorn blend she posted today. The Einkorn flour I used was ground from Jovial Einkorn berries. I did the Xanthan gum replacement as I didn't have guar gum.

      Einkorn berries have to be milled (or chopped, like in a little coffee grinder), but you can buy it already milled if you want. But Victoria is insisting on the whole grain form of einkorn flour either way of course. @@nanasturtlejustme9758

    Victoria can I just say yum, I wish I could show you my experiment today using this new flour. I made another ladies recipe for flat bread/naan, tortillas and used your keto milk and new flour and the flavor and texture are amazing! Recipe:
    Ingredients:
    60g/ Victoria's keto milk
    1tsp Instant Dried Yeast
    5g/ 1 tsp Honey or sugar
    Let yeast activate
    in another bowl add:
    12g/2 tbsp Whole Psyllium Husk
    210g/ 1 cup Cream
    200g/ 1 & 2/3 cup Victoria's flour blend
    5g/ 1 tsp Sweetener
    4g/ 1 tsp Salt
    30g/ 2 tbsp Butter, softened
    About 10g Bamboo Fiber (for rolling)
    Oven temp: 350F/176C, stove top medium heat
    Makes 4

    Dear Victoria. Let me start with my thanks, compliments, and congratulations on development of your Einkorn Keto flour. Equal compliments on development of your Truvia/Bocha sweetener. With these two developments, you have re-opened a world a favorite recipes that I have felt guilty about dipping into for the 3 years I've been pursuing keto. I've now substituted your flour into a variety of old favorites. Most are just as good as with straight Einkorn, and many are better; lighter and more flavorful. Speaking as a lifelong research biochemist, I am genuinely impressed by your gift for designing experiments and interpreting complex data. I also appreciate how articulate and well organized you are. All your videos are a pleasure to watch. A couple of other quick points you might find of interest: 1) Bamboo Fiber Powder has been scientifically demonstrated to be a solid keto contributor. It reduces sugar levels and reduces insulin resistance, among other things (see Frontiers of Nutrition, 2023, dot 10:3389/nut.2023.1161698.eCollection 2023). 2) The reason xanthan gum works better than guar gum is that the structure of XG includes negative charges in addition to hydrogen bonding sites. This gives it the ability to interact with positively charged components in your flour, especially including the white egg protein. GG does not have this ability; neither does Psyllium husk. I look forward enthusiastically to your eventual cookbook and I wish you the greatest ongoing success.

    Thanks so much for this Victoria! I already have two different versions of your Keto 2.0 flour, so I didn't yet want to make a whole new one, so I did my own experiment. I used my Victoria's New Standard Keto 2.0 using the bamboo fiber to make her basic Keto Bread Loaf. It calls for 2 cups of the flour, so I used 1 and a half cups of the keto flour and half a cup of the Einkorn flour. The batter was really runny, so I added another half cup of the Einkorn flour. It was still a pretty loose batter, but I baked it anyway. OMG! It is so good! I'm so excited to have a bread that tastes like real bread. I'm sorry, but I just couldn't get into the smell and taste of the Keto loaf before. This is a game changer. When I run out of this mix of flour, I will definitely only be making this new version with Einkorn flour. Thank you so much!

      Einkorn flour takes longer to absorb water than traditional white flour. After mixing with the wet ingredients, cover and walk away for at least 15 min. Then procede with the recipe.

    OK, so i took the plunge this morning and tried this flour with the ATK biscuits, and they turned out even better than the 2.0!!! I did add a tablespoon of buttermilk powder. The dough is a lot wetter. But decided to trust the process. I was not wrong! They did take a lot longer to cook. I also only used a little allulose, and swapped out the sugar blend she previously talked about.

    Girl, at 68, lost 60 pounds and I must say, I miss bread! I found several egg "breads' but haven't made any yet based on reviews of cloud bread, I stumbled on a flour you made and a biscuit recipe that I was getting ready to buy ingredients to make and you come out with this flour. So it is good that waited because I will be making bread with this! Thanks for making this lifestyle better by allowing a clean eto bread that tastes like bread and is not just regular bread with a keto label on it!!! So glad I learned to read labels years ago

I'm hoping she'll elaborate because I bought some guar gum and I already had the other. I'll try it today with something but my einkorn hasn't even been shipped yet.

I’m not sure how I feel about it, I do like her latest just prior to this but will admit it has an off taste to me and tbh idk what the source of the flavor I’m picking up but I’m willing to try this option to see if it lends a more traditional white flour bread like taste. I’m fine with using vital wheat gluten and have made a really phenomenal close to 🍞 tasting loaf. It is good but can be a bit rubbery as it’s pretty heavy on VWG to get there. Einkorn may be just the key!

    I just put together this new flour mixture in a Tupperware container. I am sure I am in the minority with this problem, but I will post in case there are any others who weren't thinking when they did their mixture. Victoria put her ingredients in one at a time, one on top of the other. So, I did too. Big mistake for me. First, I have an old scale and you cannot zero it out. You have to wait for it to turn off. Second, of course when it starts it is in ounces not grams so you have to wait and then switch it to grams. Rather than go through the whole sad story I will just say I highly recommend you measure each ingredient in another container and then when it is the right amount add it to the whole batch. Save yourself a lot of frustration.

    I love the whole milk recipe. I have been using it instead of almond milk for the cost, convenience and taste. I now only make my almond milk if I have a recipe that almond milk works best in it.

    Okay…this new flour is amazing. Made the dream bisquits as my first recipe. So light, so fluffy and soooooo good. The other flours, yes…I’ve made ALL your flour versions, have all been better than any store bought flour, but this is the keeper for me. Thanks for all you do!

    been waiting for this video in the UK since yesterday - with 5KG of wholemeal Einkorn flour delivered an hour ago ....lol - ready to try a few recipes over the weekend and so glad you mentioned Flaxseed for the fat content as a substitute for Almond Flour with Tree nut allergies in the house .......glad i have have the rest of the ingredients too .....this video is a blessing - Thank you so much!!!

    I am so happy, for years I have eaten sourdough. I received my starter as a wedding present 49 years ago. I t helps my digestive system with the anti-inflammatory medication I have to take. I haven’t been able to eat my favorite breakfast of Sour dough pancakes for the 4 years that I have been doing keto. I have tried making a keto sour dough starter out various keto flors.to no avail. With the new keto Einkorn flour mix I have a successful keto starter and have been eating sourdough pancakes using my favorite sourdough pancake recipe. Thank you, Victoria.

    Thank you for your efforts in research and development. Point of curiosity, have you taken any blood sugar and ketosis readings after consuming these recipes? So much is professed on the internet and especially TH-cam, but I have found that it is rare that a "keto" product or recipe actually does what it is supposed to do.     I was using Einkorn for a while back in 2015 after moving back from Germany. My husband could have the bakery and restaurant breads there (still can) but can’t have them here. The hybridized wheat truly is a problem here! Looking forward to your cinnamon roll recipe!

    Victoria, I must share that I made a recipe another of your viewer's posted (not sure on which video the post was) for Dream Biscuits using your Einkorn Flour mixture. They are just now hot and fresh out of the oven! I followed her recipe exactly as she posted and I am Amazed by the result using your Einkorn Flour. The flavor is perfect! I also added cheddar cheese to half of the batter as a trial and then brushed all biscuits with melted butter right out of the oven. Your flour mixture is heaven sent! Previously, I had not found a recipe for any bread that were edible past the first piece right out of the oven, but your Einkorn Flour has changed my mind! 🥰

    Thank you, thank you, thank you for this einkorn flour mixture. I used this flour to make sugar-free (using your sugar mixture) fresh cranberry scones and they tasted fabulously. My neighbor is sensitive to wheat products so she tried VKK’s einkorn flour to make a sugar-free Christmas Day cake and shared it with my family. It was so good that my husband feels she should make and sell it. Victoria, you are truly a blessing!!

    I'm looking at the printed recipe while she's talking, and in the video she says 2.5 cups of the bamboo fiber is 160 grams, and on the card it says 1 cup (160 grams). I checked the package - the video is right. Go by the grams regardless, but the printed card has a typo on cups. (at the time I'm writing this comment)

      I think the printable recipe card is correct and matches the video. The name of the ingredient "Bamboo Fiber" is above the measurement, with "2.5 cups (160 grams)" below the ingredient. I printed the card and actually drew lines to separate each ingredient since it's not the typical recipe format. Or perhaps it's been corrected in the 23 hours since you first printed (?)

    Thank you for this video! for about 3 months I have been adding vital wheat gluten to the 2.0 since I had no issues with gluten and it was a good addition. I think this would be better since its actual wheat. Thank you again victoria Im sure it will taste great once I buy this grain

      You just gave me an idea… I am in Canada and we don’t have bamboo flour here, but I read your comment about adding vital wheat gluten in your flour… it made me think, maybe I could use that instead of the bamboo flour. What do you think?
      I have been on keto for 5 years now and I was making my bread and buns in an adapted version of Deidre’s kitchen recipe. It is super good too but it takes a long time to make. It taste like whole wheat bread. When I make it I spend like 12 hrs to make a lot and freeze them so they last me a while and I don’t have to do it often.
      I will try a mixture of almond flour, vital wheat gluten and Einkorn flour it may work I might put in some lupin flour too ..I will see.

      Well i usually added between 50 to 80 grams depending on what i put in the flour. I used to put it in the perfected keto flour and it helped alot when u used yeast in it. It works better with bamboo flour version. I think if you are adding einkorn, u dont need vital wheat gluten but adding both and see what happens might be a good idea lol

    Hi Victoria, thank you for explaining that the Now egg white protein powder has a different number of grams per cup than the Bulk Supplements. I have only had the Now brand and was probably adding too much to my flour blend as a consequence. Maybe this explains why I have found the bread can be a bit sticky like pavlova inside when first baked, before it dries out. Very interesting, I can’t wait to experiment in future after I use up this batch. I haven’t tracked einkorn flour down just yet but will keep looking 🇦🇺

    For those of you who mill their own grain, you can’t put a 5 pound bag of einkorn berries in your NutriMill mill at one time.
    I normally mill 5 pounds of hard white wheat at a time and keep it in my freezer. I’m lazy and don’t want to mill grain every time I make bread.
    I got my 5 pound bag of einkorn berries in and dumped the whole bag in and started the mill. About 3/4 of the way through the milling process flour started blowing out the side of the mill. I turned it off to see what the problem was and the flour container was full. The einkorn berries mill up much finer and fluffier than regular wheat. Next time I guess I’ll do half a bag at a time. It made a really big mess. 😂

    Victoria - you might like to know that you are answering my prayer, or at least, the cry of my heart. Recently I tried making pancakes with the keto 2.0 flour I had on hand. The pancakes looked awesome, but unfortunately, they were pretty tasteless. My thoughts then went to einkorn and recalling former delicious recipes I'd made with it. I knew Einkorn was lower in gluten than modern wheat flour, but I was wishing that it could be Keto friendly too - - and then you go and say that it is! I was so excited after watching your Einkorn Keto Flour video that today, when my 5 lb bag of einkorn berries arrived, I immediately set about making flour from it in my vitamix, which worked like a dream. 2 cups of berries resulted in exactly 3 cups of flour, so I eagerly started mixing up a triple recipe. I mixed together the einkorn and almond flours, found my egg white powder and xanthan gum, then uh-oh - I discovered that I'm out of Bamboo fiber. Shucks! Now I have a partially mixed triple recipe and no bamboo fiber to finish it out. I believe I recall you having mentioned in a previous video that it is possible (though not ideal) to use oat fiber in place of bamboo fiber, am I right?. Ok, here's what I'm gonna do. I'll mix up the batch with just the proper ingredients I have, then I'll portion out 1/3 of it and save the rest for later. Then I'll add 2 1/2 cups (160 g.) of oat fiber to the small portion and find out just how bad it is, while I wait for a reorder of bamboo fiber for the remaining 2/3 of the triple recipe I'll be setting aside. Anyhow, just wanting to let you know what a blessing you are. I love your enthusiasm and sweet nature, and of course, your diligence in searching out the best of the best in the keto realm.     Just to follow-up. I found out einkorn is a non-gmo wheat and as such is not likely to cause problems for those with wheat sensitivity.

    I mixed up the Einkorn flour blend this morning and decided to test it using the 2 minute bread recipe, but I made Chaffles with the batter instead of cooking in the microwave. This blend tasted the most like regular flour that I’ve tried so far. Had a little bit of an eggy taste but I didn’t mind that. I used 42 g of the Einkorn flour blend and instead of 1/4 cup of warm water, I used 2 tablespoons of melted butter and 2 tablespoons of low-carb milk, but other than that I followed the recipe as written. The batter was really thick and was hard to spread out in the waffle maker. Next time I think I’ll decrease the flour blend to 34 g and increase the milk to 4 tablespoons and decrease melted butter to 1 tablespoon.

    I have a batch of new standard keto flour 2.0 (made with almond flour) that I made up not too long ago and haven’t used yet. I would love to know how much Einkorn to add to it in the right ratio to turn it into Einkorn keto flour. It would take a little bit of math to do the correct ratios!!!
